For those who would like to learn and eat. this class could be for you. On Friday. Sept. 27. a small group of 25 to 30 people will join in "The Chef's Favorite Techniques," a cooking class hosted by Stein Friksen Lodge at the Cllitretind Restaurant, where courses have periodically been taught during the past four years. Executive Chef Zane llolmquist will offer tips about how to prepare an exquisite exqui-site fall season appetizer and entree, while Pastry Chef Raymond La miners will sweeten things up with a dessert recipe. Sommelier Cara Schwindt will top off the experience with insights about wine. The evening w ill begin at 6 p.m. at the (ilitretind Restaurant with wine and "nosh food," including a cheese platter. From there, the chefs will begin an hour-and-a-half cooking demonstration. llolmquist and Lammers will set up a cooking station in the restaurant, where class participants will be sealed theater style to view the chefs in action. "A couple of big techniques we'll go over is, one, making consomme the basic technique, basic procedures and how to set it up," said llolmquist. "It's one of my favorite things to teach people because it seems so mysterious, but it's really not if you know how to make it." The next technique in store for the event is shallow poaching. "We'll do red trout and Atlantic turbo, a flat fish in the flounder family," he said. Years ago, w hen she was diagnosed diag-nosed with breast cancer, Cofer didn't ask "Why me?" Instead, she viewed the malignant malig-nant growth as a gift. "I actually do," said Cofer. a registered nurse and founder of Team Healthcare Weight Management in Park City. "1 know it sounds cheesy, but it has opened a door for me to follow my passion, which is helping other women live beyond breast cancer." Part of the gift was meeting Dr. Renato Saltz, a plastic surgeon in Park City who helped Cofer through some tough times. "He sees a lot of women with breast cancer," can-cer," she said. "When I saw him. I said, 'Thank you. God. you finally sent me to someone who really cares.'" Saltz became the most positive aspect of Cofer's cancer encounter.
