With any family with an outdoor space roasting a lamb on a spit, and city dwellers using indoor ovens, you wonder how it is that any small lamb escapes this fate and is still frolicking about the next day. Holes are dug, charcoal is lit" and spits erected and for the next several hours we all took a shot at hand turning the spits until the little lambs, all parts intact, including the heads and the greatest delicacy of all, the gonads, were crispy and succulent. succu-lent. The flipping of these tiny delicacies each time the spit turned prompted many pictures and a bit of good-natured joking amongst the menfolk. Joined by local islanders and visitors from many countries we feasted on lamb, plentiful salads and more plentiful wine before heading back to Symi town on board the seaworthy caique, the Triton. But the festival was still not finished. For on Easter night in Symi, and only a very few other places in Greece, the Embrios takes place. Starting high in the upper town, an effigy of Judas filled with straw and firecrackers, and looking remarkably like a Turk (the Greek's modern day adversary) is carried to the harbor and placed high on a pedestal at water's edge.
