Head chef Rosanne Ruiz is one of the restaurant's owners, along with Linda Sanders and Diane and Philo Smith. According to Sanders, the menu is Ruiz's domain, and is based on the California cuisine that Ruiz has won acclaim for in Laguna Beach. The food centers on good ingredients, flown in daily and prepared simply. Ruiz ships in the freshest seafood and meals and grills them over mesquite. Choices change each week, depending on quality and availability. No canned or frozen items are used. The cooks at the Grille make their own bread, pasta and ice cream. "The food stands alone," Sanders says. "It's simple, straightforward and fresh." She emphasizes that they are trying to provide customers with the same quality dining experience they can get in New York or Los Angeles. The service must be on a par with the food. With that in mind, Sanders and her partners have been putting in long hours to hire and train employees and handle all the details of starting a new restaurant. They all agreed to not ski this winter so no one would miss out on the 14-hour workdays due to injury. "I think it's paid off," Sanders says. The prep kitchen is a refurbished boxcar that has been attached to the main building. In one hall, old pictures of the depot and trains are displayed. The restaurant can seat 120 customers in three dining rooms, each with its own character. The former baggage room seats parties of up to four or six in booths. The room has the original wood flooring and a large fireplace. The centerpiece of the baggage room is the exhibition kitchen, where customers can watch the chefs at work. The parlor contains the bar and can accommodate larger parties. Windows provide views on three sides. Upstairs in the third dining room, patrons are seated under the eaves in a room filled with light colors and blue glass. This is the quietest location, making it ideal for business groups. On one side is a balcony, which the restaurant plans to open in the summer. Diane Smith, who is an interior designer as well as a restaurant owner, is responsible for the decor. Many of the architectural details, such as the wainscoting and stained glass windows, are preserved from the original building. "It's a wonderful building," Sanders says. She believes the advantage of a historic building is that it has a life and feeling all its own. The Grille at the Depot is located at 660 Main St. in Park City. For more information, call 649-9108.
