The guidelines advise you to eat six to 1 1 servings of grains per day. You may be thinking, "I'd have to be a ruminant rumi-nant animal to eat that much grain." , Six or more servings might sound like you'd have to walk around with a feed bag over your head, but serving sizes are small-, er than you might think. One serving is one slice of bread, one pancake or waffle, an ounce of breakfast cereal, half a cup of rice or pasta, one muffin, donut or bagel. There are many reasons to eat grains, especially if they are "whole" grains says Jo Ann Mor-tensen, Mor-tensen, Utah State University Extension nutritionist. Although they may come combined with high fat food, grains themselves are usually low fat with little or no cholesterol. Grains and whole grains fit well into the dietary goal of reducing fat consumption Marie Childs, daughter of John and Susan Childs, has been called to serve an LDS mission in San Jaun, Puerto Rico. She will speak in church on Sunday, July 17, 1994 at 9 a.m. in the Mapleton Red Church, 1215 N. 1000 West. She will enter, the MTC on July 20. Mortensen says whole grains are important sources pf zinc, ' copper, iron and vitamins B6, A and E. Deficiencies in these nutrients have been linked with an impaired immune system. Whole grains are important sources of both soluble and insoluble insol-uble fiber, she says. Studies-suggest Studies-suggest that eating more soluble fiber may reduce blood cholesterol cholester-ol levels and thus reduce the risk of heart disease. Insoluble fiber aids regularity and may prevent gastrointestinal disorders and certain types of cancer. The lignin fibers found in whole grain foods may be effective effec-tive in reducing risk of colon and breast cancer, Mortensen says. But how do you know if you are getting a whole grain? . Mortensen says before they are milled or refined, all grains are whole. That is, they contain all the original components of grains: an inner layer of germ, a middle layer called the endosperm endo-sperm and an outer bran layer. When grains are milled, the germ and bran are often removed and only the starchy endosperm remains. re-mains. The resulting product is white bread or white rice. Pasta counts as a grain, Mortensen Mor-tensen says, but most are not whole grain. However, you can find whole grain pasta if you look for it in specialty food stores. Rice also counts as a grain, but brown rice is the only whole grain nee. . . . . She says many popular foods today such as breakfast cereals, breads and waffles are advertised as whole grain products. However, Howev-er, to make sure you're getting foods with significant amounts of whole grains, you should read the ingredient labels.
