The leprachauns are just waiting to bring us some good luck. They are all ready to usher in the day of the Irish in full swing. Some wee Irish will be able to kiss the Blarney Stone and some may even be able to find some four-leaf clovers to add to their celebration of their big day. For those of you who didn't get to "make and take" last week here's your chance to make something to share with your family and others this week. The recipes this week are not native to the Irish, but rather are just some delectable goodies all done up in various shades of green. And be golly and begorrah I wish you all the luck o' the Irish as you prepare them. LIME DELIGHT I can or 1 qt. pears, drained, juice reserved I cup of reserved juice from pears t pkg. lime jello, small 1 cup Gingerale or Sprite 1 pkg. cream cheese, 3 oz. 1 j pint whipping cream. Bring pear juice to boil. Add jello and stir until dissolved. Refrigerate until consistency of egg whites. Add carbonated car-bonated drink and stir. Beat whipping cream just until it starts to thicken then add creamed cheese and finish whipping whip-ping to proper consistency. Stir into jello and blend well. Chop pears and add to mixture. Refrigerate. Refreshing Lime Freeze 2 cans Squirt, 12 oz. 3 T. fresh lime juice 4 drops green food coloring 1 egg white, beaten, 1-2 T. powdered sugar, optional Combine Squirt, lime juice and food coloring. Freeze until it starts to become mushy, about 30-40 minutes. Beat egg white to nice peaks, slowly adding the sugar just a few grains at a time. Whip into lime mixture and freeze. Stir once or twice before it freezes solid so color will be uniform. This is the most beautiful light green when finished. It looks beautiful. If serving at a party, it would be nice to place a cut slice of lime on the edge of the glass. When you serve it just chip it up and eat it as a freeze. However, some of my family like to add a little Sprite or 7-up to it. You can easily eliminate the sugar if desired as it will still taste good. NOTE: Prepare your favorite meat loaf mixture and stuff peppers. Allow enough room in peppers for the mixture to expand as it cooks. You can also use some instant rice and mix in with your meat loaf mixture for still another taste and texture. .... PARMESAN DRESSING PEPPERS 1 can or 1 qt. tomatoes I lb. lean ground beef 1 med. onion, chopped tsp. salt or garlic powder 'k tsp. pepper 1 4-5 T. dressing mix 4 T. parmesan cheese Cut green peppers in half lengthwise. length-wise. Remove seeds. Drain tomatoes, and reserve juice. Chop tomatoes and add remaining ingredients except dressing mix and cheese. In each pepper half mound filling and place in oiled baking dish. Pour the tomato juice in bottom of dish. Sprinkle peppers with bread crumbs and top with parmesan cheese. Cover with foil and bake 35-40 minutes at 350 degrees. Uncover and continue baking 10 more minutes. GREEN BEAN BAKE Take whatever amount of cooked green beans and line the bottom of a baking dish. Top with big round slices of Spanish onions. Put dollops of cream of chicken or cream of mushroom soup over all. (We like the cream of mushroom best). Cover with foil and cook for 20-30 minutes. Uncover and cook an additional five or ten minutes. Top with a few springs of fresh parsley or can sprinkle a little dried parsley sporadically for effect. This is so good. It hardly costs anything to make and makes a lovely accompaniment to any meal. OOPS! I almost forgot to tell you to bake in a slow oven at 350 degrees. HINTS: Brussel sprouts are good sprinkled with lemon or lime juice just before serving. To add a different but delightful flavor to baked, fried or broiled chicken with fresh lime juice on both sides just about five minutes before serving. And if nothing else appeals to you, fill your glass with regular or sugar-free Sprite or 7-up. Cut a fresh lime in half and use one quarter to one-half squeezed in your beverage for a very good and economical fresh lime drink. We watch for the sales; of times you can pick up ten fresh limes for 50 cents to a dollar. Roll them on the counter until they .become very soft, so you can utilize every bit of juice. I guarantee you will like this drink better than some you pay a good price for. Our grandkids have a standing order request for this drink when they come to our house. HAVE A VERY LUCKY AND HAPPY ST.
