Spring is in the air, too. That is why your dinner menus should be fresh and light-hearted. Here are two delightful desserts for the family Easter dinner. You might try them in advance and select the one you like best for your Easter party. EASTER CLP CAKES (Makes 20 Cup Cakes) One-half cup shortening, 1 cup sugar, 2 eggs, separated; l tea spoon vanilla or cherry flavoring, 2 cups sifted cake flour, 2 a tea spoons phosphate baking powder, i teaspoon salt, 2-3 cup milk. Cream shortening, add sugar gradually, creaming until light fluffy.- Beat the egg yolks and add to hortening-sugar mixture. Add flavoring. Sift flour, phosphate phos-phate baking powder and salt and add to creamed mixture alternately alternate-ly with milk, beating well after each addition - until batter ia smoct.h. Whip the egg whites un til stiff and fold into the batter. Fill the well-greased muffin tins three-quarters full. Bake in moderate mod-erate oven (375 F.) about 25 minutes. BUNNY FROSTING One cup sugar, 2 egg whites, 4 tablespoons cold water, 2 teaspoons tea-spoons white corn syrup, 1-8 teaspoon tea-spoon salt, 1 teaspoon maraschino cherry juice. Combine sugar, egg whites, water, wa-ter, corn syrup and salt in upper part of double boiler. Place over boiling water and beat constantly with rotary egg beater until frosting frost-ing will stand in peaks, or about 7 minutes. Add the cherry juice. Decorate each cup-cake in "nest fashion," piling the frosting on , lightly, leaving a hollow in the center and drawing the edgr of the spoon through the frosting to "ridge" it. Four gaily colored jeliy beans go into each hollow. Many readers have asked us to reprint this strawberry recipe, and so here it is again: 4 STRAWBERRY MERINGUE CAKE (Serves 8 to 10) Six egg whites, '2 cups granulated granu-lated sugar, pinch salt, 1 tablespoon table-spoon vinegar, 2 cups cream. whipped, 2 tablespoons powdered sugar, 1 quart fresh or quick-frozen quick-frozen strawberries. Beat egg whites until stiff and dry. Gradually add sugar, a little at a time, beating well. Then add vinegar, drop by drop, beating well. Pile into unbuttered springy form baking pan. Bake In slow oven (250 F. for 14 hours. Do not open oven while baking. When meringue is cold, remove side of spring form pan. The rheringue will drop slightly when it cooLs, so don't be surprised. f Place meringue on a large dish. Cover with strawberries and blanket all over with whipped cream. . BONNEVILLE WARD In the preliminary program, a reading will be given by Joe Thorson, the scripture reading will be given by Yvonne Farr, and two musical selections will be furnished. John Mower will give the special intereset class topic. PIONEER WARD During the assembly program, Mrs. Fern Ercanbrack.will read a one-act play, "Where Violet Grow." Many Cities Seek Easter Pageant People in Arizona, Nevada and Utah wish, to produce the Provo Easter pageant, according to Dr. D. Elden Beck, author of the script. He has received requests for the work and permission to present it from Thatcher, Ariz., Las Vegas, Nev., and Salt lake City. "The Promise of Galilee," as the pageant was entitled, was produced for three years as a community project in a natural amphitheater on the lake terrace east of Provo. This year the production pro-duction was cancelled.
