Meek still swinging after 65 years An open house on Sunday, April 7 will honor Mr. and Mrs. A.R. Meek on their 65th wedding anniversary. The open house will be at the Vernal Christian Church, 1845 West 750 South, from 3-5 p.m. A short program will begin at 3 p.m. and will be presented by friends and family. Refreshments will be served after the program. They request "no gifts please." The Meeks were married on April 2, 1926 in Loredo, Texas where Mr. Meek was employed in the oil field at the time. They have five children: Mary F. MAYOR LEONARD Heenev. President, Brent Feltch after a presentation by Gonealves. She honored the Vernal Club with a banner from her native city, Sao Paulo, Brazil. Rotary Club accepts gift from Brazil -Flavia Gonealves, a 17 year old exchange student from Sao Paulo, Brazil, presented a Brazilian flag and a banner from the Rotary Club in her home town to Rotary President, Brent Feltch in Vernal. She made the presentation last Thursday during the club's noon meeting at the 7-11 Ranch Restaurant - Gonealves is staying with host family. Mayor Leonard and Nell Heeney of Vernal and was sponsored spon-sored by the Rotary International Club. Her father is the past president presi-dent of the Rotary Club in Sao Paulo. She is a high school junior attending Uintah High School and will live in Vernal with the Heeneys until March of 1992. Mayor Heeney said that Gonealves is the second foreign exchange student that their Curtis Media Corporation is going to publish a Pictorial History Book about VERNAL We will hire an individual to collect photos. They are grandparents to 15 grandchildren and 27 great-grandchildren. The Meeks enjoy the beautiful outdoors, as they love to fish, hunt and picnic. They are very active in the Vernal Christian Church and are known as "Grandma and Grandad" to many children. After 65 years, they are still sweethearts. Flavia Gonealves and Rotary family has had the opportunity to host. The banner that Gonealves presented pre-sented to the Vernal club was inscribed in-scribed in her native language, which she translated to the club's membership. The inscription sent greetings to the Vernal club. Gonealves said that she has really enjoyed living with the Heeneys and said that the family was "very funny." She said that she was scared at first about attending school in the United States but that the other students stu-dents have accepted her and that she has made many friends here. She recently re-cently tried out and was accepted for the track team at the school. Gonealves has one sister at home, age 15, who also wants to be an exchange ex-change student. The District Order of the Arrow organization or-ganization assisted with the ceremony. ceremo-ny. Steele is a fifth grade student at Discovery Elementary. His Webelos leader is Deena Millecam and his Cubmaster is Ken Bentley. Sterling is the son of Larry and Linda Steele. Jean Riddle presented the program "Images of Beauty" in memory of the 60th year of the organization, or-ganization, Beta Sigma Phi. The next meeting will be on March 26 at the home of Helen Bennett. Dinah Sams hold potluck Dinah Sams met Tuesday, March 19 at the home of Fred and Theda Washburn. A pot luck dinner was served to eleven members and one guest. President Claudius Banks reminded remind-ed the group of the state Samboree in Ogden on June 6 through June 9 at the Golden Spike Arena. He also greeted Garth and Marita Batty into the chapter. The next meeting will be on April Credit Professionals stuff baskets The Credit Professional International chapter met March 14 to assemble Easter baskets that will be sold throughout Vernal by Credit Professional International members. The money earned from the sale will be used to help send the group's officers to the district convention. Cultural Arts Club discuss Fiji The Cultural Arts Club met at the home of Jean Guy on March 26. Lunch was served to 12 members and one guest, Ruth Walker. Bernice Burke was in charge of the program. She introduced the speaker, Ruth Walker, who discussed dis-cussed the Fiji Island culture. She and her husband, Don, served a two . year mission for the Church of Jesus Christ of Latter-day Saints. She commented on the beauty of the islands is-lands as they are full of flowering trees and shrubs. She talked about the native's dress and life style. The next meeting will be on April 10 at the home of Alice Fox with Maureen Anderson in charge of the program. Ladies Petroleum Club to meet The Vernal Ladies Petroleum Club will meet on Wednesday, April 3 at the Dinaland Country Club. The social so-cial hour begins at 6 p.m. and dinner din-ner will be served at 7 p.m. Max Haslem of Searle's Nursery will address the group on the planting plant-ing of vegetables and bedding of flowers. There was a man who traveled around the world in search of the single sin-gle most satisfying dessert. At the close of his journey, having tasted all of the great cremes and pastries, he was thankful to end his meal with one juicy apple. The moral: Mother Nature makes great desserts, and not only are they delicious and nutritious, but a load off the mind and frame of the calorie-conscious. Toppings can be added to enhance the fruit dessert. They can be low calorie but yet very flavorable. By substituting polyunsaturated oil or margarine where possible to commercial dessert recipes, the dessert becomes be-comes healthy, nutritious and low-calorie. Lemon Fluff Pudding 1 tablespoon unflavored gelatin 1 tablespoon cold water , 12 cup sugar , 1 cup boiling water ' 12 cup cold water 14 cup lemon juice 12 cup nonfat dry milk 12 cup ice water 1 teaspoon grated lemon rind Soften gelatin in one tablespoon of cold water and combine with boiling boil-ing water to dissolve. Add sugar, 12 cup of cold water, lemon juice and rind. Chill until nearly firm. Chill a deep mixing bowl and beaters. In the bowl, mix the powdered nonfat dry milk with the ice water. Beat until fluffy. Chill. Break up the frozen lemon mixture with a fork and add to the whipped milk mixture. Beat well with an electric mixer until the pudding pud-ding is fluffy, but not too soft. Chill again until firm. Serves six. Approximately 90 cal.serving. Fruit Bavarian 1-16 ounce can crushed pineapple; or 1 10 ounce package frozen strawberries; or 1 10 ounce package frozen raspberries , 1 envelope plain gelatin 1 cup low-fat yogurt (pineapple, strawberry or raspberry flavored) 1 egg white Soak the gelatin in 14 cup cold water. Drain the fruit well. Reserve 34 cup of the juice, adding water if necessary. Heat. Sir in the gelatin until dissolved, then add the fruit. Chill. Whip the egg white until peaks form. When the gelatin mix begins to thicken, fold in the yogurt and egg white. Pile into parfait glasses, or spoon into a baked pie crust or meringue shell. Poly Whipped Topping This polyunsaturated substitute has a taste and the consistency closely close-ly resembling whipped cream, but it has no saturated fat. 1 teaspoon gelatin 2 teaspoons cold water .. 3 tablespoons boiling water 12 cup ice water i , 12 cup nonfat dry milk 3 tablespoons sugar 3 tablespoons oil Chill a small mixing bowl. Soften gelatin with two teaspoons of cold water, then add the boiling water, stirring, until gelatin is completely dissolved. Cool until tepid. Place ice water and nonfat dry milk in the bowl. Beat at high speed until the mixture forms stiff peaks. Beat in sugar, oil and gelatin. Place in freezer for about 15 minutes, then transfer to the refrigerator until ready for use. Stir before using to retain the creamy texture. Yields two cups. Approximately 20 cal.tablespoon.
