Spring lull hits Main Street Some restaurants use shoulder season for a break By MEGAN YEITER Of the Record staff After a busy ski season, a number of restaurant owners on Main Street are taking a short break. The 'mud season" is a time for spring cleaning and remodeling, explained Mary Potts Olson, director of operations for The Bill White Restaurant Group. There are more than 25 restaurants in Historic Park City. Many of these businesses will either close for a short time or reduce their hours to five days a week. The Bill White Restaurant Group closes two out of their five restaurants. They will re-open Grappa in May and Wahso in June, she explained. Their other locations stay open throughout the year. Some owners use the slow time to update the interiors of their restaurants. Olson explained that all five of the Bill White restaurants (Chimayo. Ghidotti's, Grappa, Wahso and Windy Ridge) will go through a seasonal change in decor, including spring flowers, and garden and patio decor for the summer. Most of these restaurants rely on year-round community members to support their restaurants in the offseason. The restaurants that stay open will usually offer two-for-one deals and themed nights to entice locals to dine. "We are lucky to have loyal Park City and Salt Lake patrons and welcome the opportunity of spoiling them even more during the 'shoulder season,'" Olson said. Windy Ridge Cafe will once again be offering Taco Tuesday starting on May 3. However, other restaurant owners say it isn't feasible to stay open when GRAYSON WEST/PARK RECORD Local restaurants take the brunt of the slow business between seasons. Wahso will be closed until June 9 this year. business is so slow. The owner of Baja Cantina, Bistro 412 and Cisero's, Stephen McComb. explained that there aren't enough people to keep food products edible. With a minimal turnover rate, even the two-for-one specials don't get enough people out and about. "The off-season has gotten so bad. This is what it used to be like 20 years ago," McComb said. Executive Director of Historic Park City Utah Alison Butz explained that she hopes that Park City community members still support the businesses on Main Street that don't close, "I do think that there is an impact to the street when businesses close. Those that remain open do benefit and we hope that people still keep Historic Park City in mind when they are looking to grab a bite to eat," she said.
