Show A Picnic Cake for High Altitudes , r , 1 A special and wonderful summertime treat is this golden cake with its mouth-watering cherry glaze. Planned as picnic fare, the best part of this cake is that you can easily make it the very morning of the picnic, using one package of the new high altitude instant yellow cake mix, now available in this area. Baked in a large rectangular pan, the cake may be glazed and carried right in the same container. Some pans even come with their own sliding tops all the better for packing in the basket! CHERRY GLAZED PICNIC CAKE 1 package Instant Swans Down Yellow Cake Mix Especially prepared for high altitudes. 4 cups pitted fresh sour cherries 1 cup water 1 cup sugar 3 tablespoons cornstarch Prepare cake batter according to package directions, baking in a l.'-!x'Jx2-inch pari. Remove from oven. Spread 2 cups of the chen-ies over warm cuke in pan. Combine remaining cherries with 1 cup water in saucepan. Uring to a boil and boil 6 minutes. Combine sugar and cornstarch; add to cherry mixture gradually, stirring constantly. Boil 1 minute longer. Cool. Then pour carefully over cherries and cake. Let stand until topping has set; then serve directly from the pan. |
