Made with flavorful Washington Russets, these tasty potato treats are similar to French fried potatoes, but are oven-baked rather than deep fried. The potatoes are cut into long strips and dipped first in melted butter, then in fine bread crumbs flavored with Parmesan cheese and garlic powder. The potato sticks bake until tender on the inside, crisp and golden on the outside. Now while supply and quality are still at their peak, it's a good idea to buy enough Washington Russet potatoes to have on hand for all your family's favorite potato dishes. They keep well if stored in a cool, dry, dark area with good ventilation. PARMESAN POTATO STICKS 2 pounds Washington Russet potatoes 12 cup butter or margarine, melted 12 cup each fine dry bread crumbs and grated Parmesan cheese 12 teaspoon salt 18 teaspoon each garlic powder and pepper Peel potatoes; cut lengthwise into quarters. Cut each quarter into 3 strips. Roll in melted butter, then in mixture mix-ture of crumbs, cheese, salt, garlic powder and pepper. Place in single layer in shallow baking dish. Pour any remaining re-maining butter over potatoes. Bake at 400F. 30 to 35 minutes or until potatoes are tender. Makes 6 servings. |
