Show for the housewife COTTAGE PIE cover ahe bottom of a gread mashed potatoes add a thick layer of cold roast boef chopped or cut into small pieces seasoned with salt and pepper and onion juice and moisten with some of the gravy cover aith another layer of mashed potatoes bake until dish is heated through and potatoes browned on top MINCED MEAT ON TOAST chop or grind cold meat heat with some of the gravy season with celery salt or onion juice serve on thin slices of hot corn bread escalloped ESCAL LOPED MEAT into a baking dish put alternate layers of rice ind chopped or ground meat pour tomato sauce or gravy over each liver cover with but crumbs and bake until dish is heated through and crumbs are browned CASSEROLE OF RICE MEAT line a buttered mold with cooked rice fill center with chopped cold meat highly seasoned with salt pepper stock or gravy cover meat with nee and then cover the whole dish and steam from 30 to 45 minutes serve on platter surrounded with sauce BROWN HASH mix to equal parts meat chopped and chopped cold boiled po tithes moisten slightly with stock or gravy season and place in heat ed frying pan heat slowly until brown turn on a platter and serve with sauce CORN BEEF WITH vegetables 2 ibs brisket of corn beef ib cabbage ib rutabaga y ib 1 ib carrots 1 onion wipe the meat cover with cold water and bring slowly to the boiling point after boiling 5 minutes remove the scum and continue cooking just below the boiling point for about 3 hours when the meat is tender remove it and cook the vegetables in the water cut these in pieces of uniform size and halves if large in quarters and other vegetables in similar size cabbage should be added about 10 minutes later than the others berve the meat on a large clatter surrounded by vegetables beets peas etc may bo used instead of those named MOCK CUTLETS 3 cups chopped meat 8 cups cold boiled rice aalt and pepper meat stock or milk 1 small onion mix all together shape like cutlets roll in egg and crumbs and bake in oven |
