help if you are a working mother r SAUSAGES AND D APPLES I I 2 large or 3 small very tart apples I brown sugar I 1 cup long grain raw rice I 2 cups cold water bring to a boll bollI salt I 1 best quality link sausages nut not the precooked ones I r 4 cup ketchup no more I Core and slice apples but do not peel Cover bottom of quart 2 casserole with apples Cover apples with brown sugar In the meantime be boiling Ithe the rice rice in the salted water Rice will be done when wa water teris is a absorbed Cover I I apples and sugar with rice I Pour more boiling water over sausages and let stand 3 minutes Drain I I This absorbs the grease Arrange sausages close together on the rice I Frost with ketchup and refrigerate if you are making the casserole ahead I I of time When ready bake at for 45 minutes to 1 hour Uncover for forI forthe forthe I the last 15 minutes Serves 4 I I r MEAT I MEAT BALLS I I 1112 1 z lbs ground beef lean lean I 1 dry onion soup mix 1 cup water I I 2 oz 8 cans tomato sauce 7 s 4 tsp garlic salt salty y I 11 I I II i I I tsp thyme I 4 tsp pepper peppery I y tsp organ organo I 1 tsp dehydrated parsley flakes I Set meat aside while you cook cok the soup mix and water While this is situ situ- simI simmering I mering open tomato and pour about 2 tablespoons of it into a cup I To this add the garlic salt thyme pepper oregano and parsley flakes Stir it all welland well and then mix it thoroughly with the ground beef I Add remaining tomato sauce to the simmering onion soup Stir carefully Make beef mixture Into meatballs the size of a small egg and place in inI ina ina I a quart 2 casserole Over this pour the sauce Refrigerate covered If making mak- mak makIng Ing ahead Bake at for one hour Serve over spiced or wild or plain rice Makes about 20 meatballs meatballs STEW I I I The meat browns nicely and the gravy thickens and this has a wonder wonder- wonderful I M ful I I 2 lbs chuck I I 1 dehydrated onion soup 1112 1 oz I 1 can mushroom soup diluted I 1 can 8 oz sliced m mushrooms with juice I Mix all together and put in casserole Bake about 3 hours covered at I Serve with noodles or rice Serves 6 46 I 1 J I I DINNER R IN A A ri DISH S n I 1 chuck roast about 31 3 lbs preferably boneless and at least 2 Inches I thick 1 can cream of celery soup undiluted I 12 1 oz dehydrated onion soup I I 4 potatoes peeled I I 4 carrots peeled I 8 celery stalks I s 4 lb fresh mushrooms I z cup beef bouillion or you can use uses s cup red wine Place roast in bottom of large casserole or baking pan I like to brown I my roast fi first t Spread celery soup on top and sprinkle onion soup over overall overall I all Cut potatoes in half and cut carrots in 3 inch chunks Add both Cover Cove and bake at for one hour Cut celery in inch I-inch chunks and add II with mushrooms Add bouillon or wine and spoon sauce up well over all the vegetables Continue baking covered for one hour more If you transfer all this to a platt platter r for serving be sure to serve sauce from a gravy boat It is so good on the potatoes Serves 6 I i I II I STUFFED BAKED POTATOES I I These are great to keep on hand In the freezer I II 4 baking potatoes potatoes I 2 tablespoons margarine cut up I milk about 3 oz more or less I lessI 1 egg slightly beaten 1 1 4 oz shredded cheddar cheese or grate your own t ii I 2 tablespoons chopped chives fresh or freeze dried salt and pepper to taste I I paprika Wash potatoes well dry skins and rub them lightly with margarine or I bacon grease Bake at for one hour When done cut in half lengthwise with sharp knife and scoop out insides I carefully and put in large mixing bowl Add the 2 tablespoons margarine milk egg and beat with electric beater until smooth smooth-no lumps please I Add cheese chives salt and pepper Mix well Heap back in shells Put on cookie sheet Sprinkle with paprika Sometimes I will also use bacon I bits in the potatoes Freeze thoroughly Put in plastic bag when frozen When ready
