appreciated precia ted the hearty response which the women everywhere have given us they have shown by leaving their homes bomea when a thousand other things might have claimed their attention and coming out to our meetings that they are eager for now new ideas they welcome any new discoveries co veries which will help them in making better homes and thereby raising the general standard stan daid of the comm community unit y there has never been a time when work of women in the preservation of food stuffs bluffs has assumed the enor n moua ou importance that hat it r reaches hen to day the present war is not mot alone a conflict between armies but it Is also a conflict between women and wars most moat drs dreadful adful handmaiden famine ones one can scarcely think without a shudder of the terrible conditions existing in europe and when you waste a crust ot of bread remember that many hungry hands would reach and fight for it in europe in view of these conditions I 1 would ask the women of oc uintah county to see to it that nothing of the plentiful crops you enjoy shall be allowed to waste it our supply of bottles is limited dry your vegetables and fruits but never let them be unused every woman needs only to look after her own home in this respect and be determined that it if this community shall be guilty of any waste that you individually are in no way responsible at the pres prea ent ant time waste to Is a crime As many of you know we have been endeavoring to organize clubs among the girls of this county for the purpose of encouraging and instructing ting the girls in homo home work all too often we find girls who look with disdain upon the humble tasks about the house this of course Is a false and superficial attitude and the sooner such notions are stamped out the sooner our girls will consider it their duty to qualify themselves as home makers we have so BO far succeeds succeed ei 1 in organizing gan izing seven of these clubs which sie aie now in thriving condition however I 1 know there are many girla not enrolled in these cauls who should be I 1 have found a few mott moth ers ere who say aay to their daughter you have enough to do at home hoine herc without belonging to any club to these women I 1 say you are standing in your own light to say nothing of the injustice you do to bour daughter there are mothers who say my ways have served rue me well hence they are good enough for my girls to this class bo be it known that while you have stagnated mentally others have been moving on and new ways of doing bouso work are being discovered so BO that when she becomes mistress of a homo home she may y be able to accomplish nit all that you have done and still hami haie time to keep abreast with the times thues bet ter than you have done through the organization of 0 the girls clubs we hope to bring our future homemakers home makers in contact with first class information in home ec where to is the woman who when brought face to face with the question mants to be responsible for discouraging any ally effort aich has so no high a motive ino tive the large majority of tile the women woman in towns where these clubs cluba are now organized have supported and encouraged the members with the whole heartedness so characteristic of the ho people of uintah county but the low few to whom I 1 have referred are st still using their little hammers now ae e all know that in unity there Is strength so put up these dangerous little weapons and for once enjoy the satisfaction of working tor for a good cause us in my travels about I 1 have met with people who use preservative powders in their canning of vegetables and moats they hays have through gli advertising matter been misled to believe that they are both sate and practical tor for use in the preservation of foods which havo have proven hard to keep under the com known methods of mining canning by following the directions for the cold pack method of canning by carefully blanching and cold dripping all products batore packing followed by a thorough sterilization during one period it will be entirely unnecessary to use canning compounds so the first argument against the use of canning compounds la is that tat it la in unnecessary as it is possible to sterilize any fruit or vegetable by this athla cold pack one period method of canning without the use of powders the second argument against it Is that many of these compounds are positively harmful to health some of them contain as aa high as ninety five per cent of boric acid aich Is harmful when taken inwardly in large amounts others contain compounds which have preserving qualities and which are def known to be detrimental to health since they are unnecessary very few thinking people will care to experiment with them A third argument is the important one that many of the states and the national government have pure food laws las which restrict or forbid their use every agent employed by the government ern ment that it has been my privilege to hear thia summer has strongly advised against them wh should we take harmful substances into our bodies when hen it is unnecessary in view of the fact I 1 find bad some women who are careless in following the directions for canning I 1 wish to submit the following suggestions gest ions to safeguard you on little yet important points these suggestions gest ions are the outgrowth of mistakes the women in some localities are making I 1 do not combine two recipes or sets of instruction to do so means to fall 2 remember that adequate heat plenty ot of clean water both hot and aad cold and complete sterilization are absolutely necessary 3 the cold pack method does not mean that the t e canning is done without heat but simply means that the final sterilization is done after the jars has been completely filled the rubber and cap put in place and the jar partially seated sealed complete sealing Is done after the sterilization 4 when using glass jars always utilize the jars on hand but when you need buy new ones buy the best beat they are cheaper in the long run no glass jar with metal or rubber in direct contact with the food la Is desirable unless the cap is enameled lacquered or vulcanized wass glass jirs should be completely cleaned and should be taken directly from hot water to be filled or at ter being sterilized capped down until used 6 5 pack the jars thoroughly but avoid over packing vegetables expand during sterilization 6 avoid too much salt in canning vegetables vegetable a none at all to la better than an over dose as aa too much injures both the flavor and quality 7 extensive equipment is not necessary for home canning simple boilers and lard cans may be made both convenient and efficient it if one uses a little ingenuity 8 begin the canning work with a 1 small quantity the first day take time inae to do the work well then test teat the product before canning any great amount 9 canning with a home made outfit first puts one in a better position to determine what kind of in an outfit to buy to suit the individual needs it if ou are contemplating buying one purchased contrivances simply limply thorten shorten the sterilization period and make the handling of large mounts amounts less troublesome 41 good management is no where more lore important than in canning the rhe proper placing of the table with relation elation to the canner voter vater fuel and supply of vegetables or fruit and the system mitt which the canning Is executed are all essential matters 11 secure soft water for canning wherever possible too much mineral in the water aster hardens the product 12 if in sterilization your rubbers give way pull oot the old rubber and put in a ne new one without removing the lid it if
