It's not necessary to follow a long, complicated recipe to have good candy. The butter toffee recipe here is surprisingly simple sim-ple with easy directions. And it's the kind of recipe you can count on to come out right every time. As the name "butter toffee" implies, real buter is the secret of this candy's goodness. Butter toffee is generously filled with walnuts and almonds. Melted chocolate is brushed over the top when the candy is cool and then more chopped walnuts are sprinkled over the top. You'll find this candy is fairly hard after cooling. Break it into pieces by striking with the handle han-dle of a knife. BUTTER TOFFEE 3 dozen pieces 24 cups sugar 1 teaspoon salt cup water 1 cups batter 1 cups (H pound) chopped blanched almonds 1 cap finely chopped walnut meats Va. pound milk chocolate, melted Bring sugar, salt, water and butter to boiling; add half the almonds. Cook, stirring constantly, con-stantly, to the hard crack stage, 290 F. Add the rest of the almonds al-monds and half of the walnut meats. Pour into a greased shallow shal-low pan, 9x13, and cool. When cool brush with the melted chocolate choc-olate and sprinkle with the remaining re-maining walnut meats. Break in pieces. |
