And any day, Carolyn may substitute for a waitress or one of the kitchen help. We are always ready to assume any position where were needed, Mr. Jensen said. I really enjoy cooking on Saturdays and Sundays, he added. And it gives our cools a break. I also supervise the weekday night shift. Ranee supervises the day shift. Cooking has long been a hobby of mine; one that started when I was just a kid watching my mother perform her kitchen magic. She could make a meal out of practically nothing. I guess she influenced me in getting excited about cooking. Once I started, my enthusiasm grew. A chef once told me basically all I had to do to cook was use good ingredients with a bit of salt and pepper, then add from there. I order the best ingredients available then try my best to turn them into tasty specialties. Our beef and pork come from g the local plant owned and operated by Bill Holt. He ages and cares for the meat to our specifications. Then I cut our steals, liver, etc. and we hand-patt- y the hamburger and sausage. Our prep cooks do much of this work along with such tasks as breaking lettuce and preparing other items for our salad bar. In addition, we prepare our own fish and chips from fresh halibut. This is a favorite at the cafe. Mrs. Jensen said she and her husband receive many compliments on the fine food served at Moms Cafe. And we receive some complaints, which we welcome when there is a problem. These complaints keep us on our toes. Til never forget one lady going through on a trip from New York to California who really enjoyed our German Chocolate Fie. She commented that The pie was so delicious, I thought I had died and gone to heaven. The following inscription is found at the beginning of the daily menu at Moms Cafe. We are proud of our food. It is prepared from basic ingredients by our own cooks. The inscription introduces a wide variety of specialties available at the restaurant including a daily luncheon and dinner special. Breakfast is served each day. At home, Carolyn Jensen said her husband does most of the cooking. Ive never enjoyed the task, Mrs. Jensen laughed. I dont like to mess up my kitchen.
