Turkey is not graded in the sence that beef is A grade an absolutely perfect bird. B grade . usually some split skin or a croocked breast bone. C grade this poor critter probably lost a wing or something in the shuffle. Now for the stuffing te prefer the old fashioned kind . . . plenty of celery, onion, salt, pepper, rubbed sage and lots of bread. I run the celery and the onion through the food chopper and then sautee them in butter before 1 add the bread and spices For a change try adding 1 lb. of good sausage that has been cooked and crumbled Now rinse the bird inside and out with cold water Pat dry and sprinkle the cavity generously with salt, pepper and lemon juice. Now truss and fill with the prepared Slather and I meac slather the dressing outside with plenty of butter ( or margarine) salt, pepper and paprika Bake in a slow oven 325, turning frequently. Allow about 25 minutes per lb When thebird is nicely browned, make a tent of tin foil and cover loosly. Grav y . . But anyone who has ever been chased by a turkey at a very tender age . . . looked eye to beady and then eye at the very same level turned and ran as though all the fiends of hell were upon them, will know my sentiments towards America's noblest bird. I am here to tell you that turkeys can run faster and farther than four year olds. And they bit fat little legs with fierce little nips. Uust another meal. Once, we triet a new plan, something very modern. So that everyone could have u drumstick, I bought a Cornish hen for every member of the family. And everyone pollished off his own little turkey, and then looked, around hungrily for more. What with the price of Cornish hens I hadnt provided seconds, so there wan't any more. It was a rather lonesome Thanksgiving night . . . no turkey to nibble on . . .no cold dressing to eat. Next year, we happily went back to the conventional twenty pound turkey. THIS ONE IS NICE INTRODUCTION This column is intended to be a series of informative articles touching on the things women need to know. As a pilot for the past two Tears Mrs. Reuling has flown ner Cessna 182 mostly for enThis month she put joyment. it to work to further the cause of painting in Utah. Mrs. Reuling, who helped set up the Rental Sales Gallery at the Salt Lake Art Center as a joint Art Center-JuniLeague project, some years back, is taking the Gallery, by plane around Utah. With Jim Haseltine, director of the Art Center, Mrs. Reuling flew to Ephriam on Wednesday November 10 with 20 paintings from the Gallery. They rented ' or STEPPING out of her Cessna 182 Mrs. Richard Reulin greets Mrs. Paul Olmstead of the Wasatch Academy. Sail Lake Art Center director Jim Haseltine is at right. 12 of the paintings, and that evening Mr. Haseltine spoke on 100 Years of Utah Art to 250 people who came from as far away as Fillmore and Delta. Last week the clouds were a bit low so the pair had to drive to Brigham City where they met with equal success. The next stop will be Cedar City in aoout 3 months, with a return to Ephriam to pick up the paintings rented there last time. Mrs. Reuling provides the plane, the Gallery provides the art, all of which is painted by Utah artists. The project is also administered and promoted by the American Association of University Women, Utah chapter, who make the arrangements in each of the towns and take care of the Mrs. Paul Olmstead, the art teacher at Wasatch Academy in Mt. Pleasant took care of the rental arrangements in Ephriam. The project is called Rental Its express Gallery Artlift. purpose according to Mrs. Reuling, are: 1) to encourage the use of original Utah art in homes, offices, schools, and other institutions by members who would ordinarily be unable to rent fror the Salt Lake City Rental Gallery. 2) to give qualified artists of Utah an opportunity for keeping their work in circulation and before the public throughout the state. 3) to acquaint viewers with work br artists from different . reas of the state. The rental fee of the paintings varies with the original price of the painting - ranging from 38.25 to 318.00 for the period. cl ARTLIFT brings paintings of Utahns to Utahns, here Mrs. Reuling takes one of the 20 canvases out of her plane at the airport.
