Lay the pineapple, dates and pecans in this sugar mixture, and place a cherry in each pineapple center. Then prepare the Sponge Part SPONGE 4 eggs cupful of sugar cupful of flour PART 1 tsp. of tartrate baking powder tsp. of ealt ii tsp. of lemon extract Beat the egg yolks until light and Gradually add the sugar, which has been sifted. Fold in the beaten whites of 2 eggs. Sift the flour, baking powder, and salt together 3 times, and fold into the mixture. Fold in the beaten whites of the other 2 eggs and add the flavoring. Pour over the pineapple mixture and bake in a moderate oven (350 degrees) until done.
