Profitable utilization of milk byproducts is now more important than usual to the farmer and the dairy industry, and the bureau of dairy industry, United States pepartment of Agriculture, is trying to find profitable uses for skimmilk, says O. E. Reed, chief of the bureau. In one years volume of dairy by' products, which includes skimmilk, buttermilk, and whey skimmilk being by far the most important there is about 900,000,000 pounds of valuable food protein, a large part of which is not being utilized to the best possr-bl- e Col advantage, says Mr. Reed. tage cheese, which Is made from skimmilk and which is largely protein, is, when properly made and merchandized, one of the most profitable outlets available to the dairy products In plant for utilizing the skimmilk. the past many plants have lacked a standard method for making a unie form, cottage cheese. The bureau of dairy Industry has. by experimental work both In the laboratory and on a commercial scale, demonstrated a method Which has consistently produced excellent results. This method produces what is rennet-typ- e called the of cottage cheese. When this type Is made properly it has a rich, creamy appearance, a low acidity, good keeping qualities, and distinctive curd particles, and Is a product attractive to the consumer. The bureau is issuing a mimeographed circular which gives detailed information on how to make this type of cottage cheese. A plan for economy which will save several thousands of dollars has been out lined by the state fish and game department The state game commissioner announces that economy is necessary as Utah cannot complete its present program with the present rate of Income allowed the department. SALT LAKE CITY, UT. Corporations whose fiscal year ends after January 1, 1931, and before June 30, 1931, have been given until Sep- -, tember 15 to file corporation franchise tax returns under an order by the state tax commission. Legally some of the taxes are due now, but because of the fact that the tax commission is not yet ready to receive returns the time for filing has been extended. CISCO, UT. Two new federal aid highways, costing approximately $300,000 and connecting Eastern Utah with Colorado at the state line, are recommended by the state engineers for acceptance just as soon as a few finishing touches are completed. These final touches are In progress, it is reported. The projects Include 23 miles of highway east from Cisco and 16 miles east from Monticello. BOISE, IDA. C. Cows Health Indicated by Coloring of Her Eye When buying cows or heifers or any kind of animal for that matter it is well to look carefully at the eyes. Many a man has gone painstakingly over an animals udder and bought when a single look at the eyes would have warned him of trouble to come. The normal eye is full and bright The secretion of fluids about the eye should be normal. If an eye is swimming in water, the animal may be going down with a cold and, when chronic, may be Indicative if tuberLook out for pink eye, a culosis. very contagious disease that soon spreads to all members of the herd into which the infected animal may be Introduced. The affected eye is pearl gray in color. A dull eye may indicate that the cow is anemic or temporarily off feed. This is just another point to remember when buying new members for the heard. Allow Ample Space for Moisture Among Trees In planting currants and gooseberries, it is quite common to find these set over against the fence or grass growing border of the garden. In some few instances this plan is all right; but where moisture is scarce these plants should be set in rows where they can be cultivated on both sides, having a space of nearly 10 feet between any plant and other crops. If planting apple trees at the same and setting these rows 30 feet or more apart as they should be to do the best in later years one row of the small fruits may be planted midway between each two rows of apple trees. These will have passed their best years by the time that the apple trees have reached a size that requires all the space between for drawing on for moisture, so they may be dug out time A honey bee must visit 56,000 clover blossoms to make a pound of honey. Tooele county shows a shrinkage of almost in the value of property assessed by the county assessor this year, according to the report submitted to the state tax commission. The property is assessed at $7,247,-68compared to $9,740,549 in 1930. Every class of property shows a large decrease, but the most drastic reduction is on livestock, which was assessed at $1,620,629 In 1930, compared to only $822,344 this year, a reduction of about RIVERTON, UT. There are In Salt Lake County 8,000 dairy cows, and the agricultural department estimates that profits of the farmers would be greatly increased by elimination of at least 2,000. The 2,000 cows that do not produce enough to pay their annual bill for feed, labor and investment, do produce enough milk to create a surplus that has demoralized the butterfat market. The body of Clarence Welch, local school teacher, has been found lodged on a rock in the Snake river at the Suddreth ranch near here. Diseases of Poultry is the title of a new bulletin which has just been published for free distribution to interested farmers and poultrymen, by the Colorado Agricultural college experiment station.' Dr. L E. Newsom, in charge of veterinary pathology at the college, is the author. While knowledge of the cause of disease and its control is essential to the poultryman," says Doctor Newsom, the ideal should always be kept in mind of a system of management that will keep the birds in a state of health. Theoretically at least this is a possible accomplishment, and an outbreak of disease in a flock is evidence that the laws of hygiene have not been fully observed. With the increase in the size of flocks, opportunities for the spread of disease are greater, and the difficulties of housing and feeding are greatly increased. With the modern poultry plant of today careful attention must be given to these details or the business cannot be maintained. Among the subjects discussed in the bulletin in a general way are housing, feeding, water supply, yards, cleaning, disinfection and breeding. A large number of diseases are discussed In detail. Some of these are nutritional roup, rickets and leg weakness, cholera, typhoid, bacilliary white diarrhea, tuberculosis, roup, diptheria, Canadian flu, turkey roup or sinus disease, chickenpox, paralysis, coccidi-osiblackhead, thrush, parasitic diseases such as lice, mites and scaly leg; round worms, tapeworms, crop bound, cannibalism, constipation, dropsy, broken yolks, egg bound, air under the skin, bumble foot, sod diseases, tumors, botulism poisoning, salt poisoning and arsenic poisoning.
