Show DECEMBER 8, 1987 Dont fret: venison makes for good meals VENISON TERIYAKI pounds round steak of venison can condensed oeet consomme 1 Vi (or cups vater and 2 beef bouillon cubes) 'A cup soy sauce V cup chopped onions clove garlic 2 Tbsp. lemon juice 2 Tbsp. brown sugar tsp. seasoned salt (optional) Slice meat diagonal across grain about V inch thick. Mix the other ingredients together for a marinade and pour over the meat strips. Refrigerate overnight. Drain the meat and broil 4 from heat for 5 minutes on the first side, baste with marinade and broil 2 1 1 1 3-- the second side for 3 minutes. Baste again with the marinade. Heat the remaining marinade and serve as a sauce with the meat. Serves 6. Serve with rice. Vi tsp. pepper ' tsp. oregano 1 clove garlic crushed 3 Tbsp. shortening 6 medium potatoes, sliced 2 medium onions, sliced 2 carrots, sliced in thin strips 1 green pepper, cut in strips 3 cups hot water mixed with bouillon cubes 2 beef bouillon cubes Cut steak into serving pieces. Pound in mixture of 'A cup flour, Vi tsp. salt, A tsp. pepper, oregano, and crushed garlic into meat. Brown in shortening; place browned meat in bottom of a 3 quart baking dish in single layer. Layer half of potatoes, onion, carrots and pepper on top of meat. Sprinkle with remaining flour mixture, salt and pepper. Place remaining vegetables on top and pour the bouillon over all. Bake covered for hour and uncovered for Vi hour at 350 degrees. Serves 6. 1 VENISON STEAK CASSEROLE 2 pounds round steak of venison 6 Tbsp. flour I tsp. salt CANTONESE STYLE (Made with venison) pound of ground venison Vi cup bread or cracker crumbs 1 tsp. chopped onion tsp. salt Vi tsp. pepper Vi cup evaporated milk 2 Tbsp. oil Mix all the ingredients together and shape into meatballs. can(13'ioz.)pineapple tidbits, drain and reserve liquid VA tsp. cornstarch Vi cup vinegar Vi cup sugar 2 Tbsp. soy sauce 2 Tbsp. butter or margarine Vi cup sliced green onion green pepper cut in A inch 2 1 1 1 strips cup celery cut in diagonal slices large tomato cut in wedges Vi cup toasted almonds Brown the meatballs in a little oil or fat until brown. Drain the pineapple and save the liquid. Mix the cornstarch with water to make a paste and add to the pineapple liquid. Add the vinegar, sugar, and soy sauce. When meatballs are browned, pour the pineapple juice mixture over them and bring to a boil. Cover tightly and simmer 20 minutes. Add butter and stir until melted. Add the drained pineapple tidbits, green onions, green pepper, celery, and tomato and stir lightly. Cover and cook over low heat for 10 minutes. Serve over fluffy rice sprinkled with toasted almonds. Serves 6. I 1 VENISON ORIENTAL STEAK 1 pound venison steak cut across the grain 3 Tbsp. cooking oil 1 clove garlic crushed 1 tsp. grated ginger root 2 medium tomatoes, peeled and sliced 2 green peppers, sliced thin 1 can bean sprouts Layton High Schools band is doing its part these days, under auspices of Margaret Scriven, band parents organization president. Cook over medium heat for ten minutes. Add tomato, green pepper and cover and cook slowly for 5 minutes. Add bean sprouts and simmer 5 minutes. Mix cornstarch, salt and pepper, sugar, water and soy sauce, and pour over the meat. Simmer for 10 minutes. Add the green onions just before serving. Serves 4.
