All in vou r refrigerator and freezer to help you put meals on the table with little or no effort. Most of the work is done ahead of time. You can accomplish this by: L Have main dishes on file 2. Fix super salads and 3. Have day before desserts. Serve a favorite from South of the bor- der: You can get real mexican flavor in this casserole: Hot Tamale Pie. It boasts a puffy corn-metopper, a spicy filling of ground beef, whole kernal corn and ripe olives. Prepare it in your spare time, and store it in the freezer against a busy day. To go along, serve hot corn chips, a spinach-onio- n ring salad, pickled peppers and a caramel pudding. I listed these in my other columns. Again, you can have these upon request. al 2 cans (2 cups) seasoned tomatoe can (1 and 33 cups) whole kernal corn, drained 12 cup chopped pitted ripe olives 1 clove of garlic, minced 1 tablespoon sugar 1 teaspoon salt 2 or 3 teaspoons chile powder Dash pepper 1 and 12 cups shredded process cheese 12 cup brown sugar 1 12 cups smoked ground ham pound ground fresh pork shredded corn 34 cup crushed bite-siz- e One thing that I have learned through the years, is to have main dish recipes on hand where you can put your finger on them at a minutes notice. It saves you a lot of time and frazzled nerves when you need a good hearty main dish in a rush. You may have a certain time of the week when you have a little spare time, in which you could prepare something for an especially busy day. Why dont you whip up tomorrows main dish and park it in the refrigerator till baking time? Try some of tablespoon; butter or margarine Cook onion and green pepper in small amount of how fat till just tender. Add meat: Brown lightly: Spoon off excess fat. Add next 8 ingredients: Simmer 20 or 25 minutes or until thick. Add cheese: Stir until melted. Pour into 10x6x1 and 12 inch baking dish. Cool thoroughly: Cover tightly with foil: F reeze. To serve: Bake covered at 375 degrees for 1 hour and 15 minutes: Add corn meal topping. Bake 35 or 40 minutes longer or until hot through and top is browned. This recipe service six. When you spy a meat bargain, buy double, cook all, and freeze all! Here are a few hints on freezing cooked main dishes Dont oversalt or overseason cooked foods its better to add more later. Dont overcook foods to be frozen. Cool quickly before packaging: freeze immediately in meal-siz- e portions. Dont refreeze cooked foods. Use frozen foods within the recommended storage time. Meat dishes: if roasts are whole, wrap securely in foil or other moisture-vapor-prowrapping and tie in Stockinettes. Slices of roast meat should be frozen with a protective coating or gravy. Package other foods after they have cooled. Creamed dishes: if cream sauces and gravies separate after freezing, beat with a fork or spoon during reheating. Separation is usually caused by the combination. For creamed dishes and A. La Kings, use the fat sparingly when making the sauce. I hope these hints will come in as handy for you as they have for me. Also, remember that the safest time allowed to keep in the freezer is 8 months.
