Heres how! pint-s:ze- meat- - Cover disih and Plice, in the frig for 2 days Tarn fre-in- fluently , (the meat that is.) Now, cook slowly in a generous amount of oil unt'l done as desired. Slice thinly onto a hot platter and surround with mounds of pureed chestnuts. Makes at least 4 servings. Wild rice and currant jelly are a must with this dish. d BRAISED VENISON BLACK FOREST STYLE 2 to 3 lbs. venison loin juice of 2 lemons ' 1 cup red wine 1 cup cider 1 onion, peeled 10 whole cloves 1 bay leaf 4 pepper corns Mtrfr Riirirw and sliced Pl'REED CHESTNUTS Wash V4 lbs. chestnuts. Use a sharp, short knife to cut 2 gashes on the flat side of each nut. Cook in 2 tbl. butter or olive oil, over low heat and shake until the shells loosen. Let cool. Remove shells and skin with a kn:fe. Now, cover with boiling water. Cook 20 minutes or until the nuts are soft. Put through potato ricer or blender. Season with salt, pepper, butter or cream. Beat and reheat in upper part of double boiler over boiling water, whipping mixture lightly as it heats. Allow Vi to Vi lb. chestnuts per serving. Serve this with any roast fowl or game. This is just delicous.
