Show i Keep a Vinegar Jar. j Boil and strain and then boll down the cores and pollings of apples. Place In vinegar Jar and add more of this kind as you have it. Let ferment. Don't think it Is spoiled when a thick mother forms on the top of It. It should form. If your vinegar molds It is not strong enough in sugar. Anything containing con-taining starch or sugar or both can b turned into vinegar by fermentation. The water that beets have been boiled in can be boiled down, strained and added ; likewise water from sweet corn can be used. Always boil down a little. Any surplus yeast can be strained and added to this jar. After it is turned to vinegar it can be boiled and a new jar started- Save some of the mother for a new jar. The longer this vinegar stands the stronger It becomes. j |
