The high nutritional value of dried beans as well as their storage benefits have made them staples throughout the world. While their protein content is not as high as that of animal products, they are one of the highest in quality and quantity of proteins in the vegetable world, making them an espe- cially good choice for soups and other dishes. The protein derived from bean dishes is increased by using animal products in the dish or. by combining them with grains. For this reason, a handful of rice is often tossed in near the end of cooking time when making bean soups. Another way of increasing the nutritional value of beans is sprouting the beans before cooking. Sprouting not only increases the vitamin content of the beans, but shortens the cooking time by a great deal. Some people feel beans are more easily digested if the in salads but are more often eaten cooked. The beans can be cooked any time during the three days or can be sprouted for a longer time, but three days seems to sevelop a nice length of sprout. If you dont have time to sprout the beans, they can be soaked overnight and then cooked the next day. The overnight soaking can even be eliminated by bringing the beans to a boil and boiling for minutes then taking them off the heat and allowing them to stand for 1 hour before cooking. Beans done this way will require the longest cooking time of any of the above methods. When cooking beans, do not add anything with acid to the beans until they are soft as acid will lengthen the cooking time and make the beans tough. Acid foods include tomato products and vinegar or lemon juice. Simmering is the best way to cook beans as hard boiling will cause them to break open. Simmering them also helps to avoid scorching. To keep the foam down when 2 cooking beans, add a tablespoon of butter or bacon grease to the water at the beginning of cook- ing time. Beans are usually near the end of their cooking time if the skins flake when you blow lightly on them. Generally speaking one pound of dried beans is two cups and will produce about six cups of cooked beans. covered for one hour longer. Remove bone, cut up meat and return to soup. Season to taste. Senate Bean Soup 1-- 1 pound white beans, rinsed and drained 1 large smoked ham hock 3 potatoes, cooked and mashed 2 onions, chopped 1 cup diced celery 2 cloves garlic minced Salt and pepper to taste Cover beans with water and boil for two minutes. Remove from heat and cover. Let stand for 1 hour. Drain beans and measure liquid. Add enough water to make 5 quarts. Bring to a boil and simmer for two hours or until beans begin to mush. Add remaining ingredients except salt and pepper and simmer, soaking water and simmer, covered, until tender, about 1 hour. Drain, reserving the liquid. Brown the onion, green pepper, and meat together. Add the beans and remaining ingredients and simmer 1ft hours adding the reserved water as needed to keep from scorching. A dash of cayenne and paprika can be added if desired. Makes about 6 servings. . v. W 11 nutes, stirring often. Combine skillet contents with beans and simmer, covered, over low heat for an additional 15 minutes. Remove ham bone before serving. Makes 8 serv-ing- Western Bran Stew cups pinto beans ham hock 1 tsp. salt ft tsp. hot pepper sauce ft cup bacon fat or lard 1 large onion, chopped 4 medium tomatoes or lft cups canned tomatoes ft cup minced parsley ft tsp. ground marjoram 1 tsp. chili powder Soak beans overnight. The next day add the ham hock, salt, and hot pepper sauce. Bring to a boil and simmer for about 1 hour or until the beans are tender. Drain beans and reserve liquid. When beans are almost tender heat bacon fat in a large skillet. Add onion and garlic and cook until tender. Add the remaining ingredients to the onion except the beans and simmer with 1 cup of the reserved liquid and cook over low heat for about 45 mi 2 1 6-- Portuguese Baan Soup red beans quarts water onions sliced garlic cloves, minced ft cup bacon fat 6 potatoes, diced 2 bay leaves 1 tsp. ground allspice 1 8 oz. can tomato paste Salt and pepper Soak beans overnight. In the morning simmer until tender. Cook onion and garlic in bacon fat until tender and lightly browned. Add with the remaining ingredients except salt and pepper and simmer, covered, for about lft hours. Season to taste. Worchestershire sauce Few drops of tobasco if de1 1 1 beans are sprouted before cooking. Sprouting is a very simple process which takes only a dark pan and some patience. Since it does take several days you will need to plan ahead. On the evening of day one, sort and rinse beans. Place them in a large pan. They will need room to double. Cover them with water and soak until the morning of the next day. Drain the water and rinse the beans in fresh water. Drain well and cover the pan with a clean cloth. Continue the rinsing and draining at least twice a day for two more days. By the third day the beans should have little sprouts and they will be tender and sweet.
