As the garden’s produce is soon comin to the end of the season, here is a pickle recipe for beets that my family enjoyed. Pickled Beets Select small, young beets, or cut larger beets into chunks, cook until tender, dip into cold water. Peel off skins. Make the following syrup. 2 cups sugar 2 cups water 2 cups strong vinegar 1 tsp. cloves 1 tsp. Allspice 1 Tbls. cinnamon Pour over beets and boil 10 minutes. Pack into sterilized canning jars and seal. A little grated horseradish added to pickled beets gives variety. Though we have had rain showers that has made it hard for the farmers to get the third crop hay harvested we have had a mild and lovely early September so far. Before long we will be wishing we had the long hot weather back instead of the cold and snow.
