Form meatballs about 2 inches in diameter and set aside 1 cup finely minced onion clove garlic, finely minced 2 tablespoons olive oil (see above) package lasagna noodles 1 cup cottage cheese 2 cups Jack cheese, grated 2 to 3 hard-boileeggs, sliced at hen I decided to cut back on ground beef, I had severe mental withdrawal. What, give up meat loaf, spaghetti and lasagna? I cant bear it! Then I discovered Marvel Meat. Thats what Ive started calling lean ground turkey because, thanks to this marvelous meat, I can now have the best of all possible worlds. Consider: Ground turkey is so lean there is almost no fat to drain off. That makes it healthier. To show how lean it is, I made a meat loaf with two pounds of ground turkey (recipe follows) and when it was cooked, I had one tablespoon of fat to drain off. Contrast that with the fat content of ground beef. Ground turkey strongly resembles ground beef in color so it looks just as appetizing. It browns nicely but will be a ; shade lighter when cooked. Because of the low fat content, you dont have to brown the meat first in order to drain off excess fat. That eliminates a step in cooking and makes it easier to cook with. The fine consistency of the meat is such that you dont have to worry about your meatballs or meat loaf cracking and crumbling during the cooking process. It holds its shape beautifully and the cooked meat : : is much nicer to slice. Cost? A pound of lean ground turkey costs less than a pound of the cheapest cut of ground beef. You are paying for almost pure protein with no wasted fat content, so you are getting your moneys worth, for a change. In fact, I find I use less ground turkey in my recipes because there is no wasted fat, so I save even more money. Taste? Ground turkey has a mild flavor that does beautifully in a variety of dishes. Because of the mildness, it does not overwhelm the herbs and spices you may want to use. So saying, here is a selection of dishes that traditionally use ground beef but have been converted to lean ground turkey. MARVEL MEAT LOAF 2 pounds lean ground turkey Zz cup milk 2 eggs 2 to 3 slices whole-whebread, crumbed in the at blender cup finely chopped onion 1 tablespoon finely minced fresh parsley dash oregano, to taste dash salt and pepper, to taste 1 teaspoon Worcestershire sauce Zz Mix all ingredients thoroughly in large mixing bowl with your hands. Form meat mixture into a loaf and bake, uncovered, in loaf pan or oven casserole at 350F for about 1 hour or till done. Serves 6 to 8. MARVEL MEATBALLS IN WINE SAUCE Meatball 1 pound lean ground turkey 1 egg Zs cup milk the refrigerator. in Wins Sauce 2 tablespoons butter Zz clove garlic, finely Zz Z2 pound ground turkey can tomatoes with juice 1 can tomato sauce 1 tablespoon sweet basil Zz teaspoon oregano 1 (16-ounc- to 4 cups Spaghetti Sauce 1 d MARVEL CHILE CON CARNE 1 tablespoon butter Zi cup onion, finely chopped Zz clove garlic, finely minced to Vz pound lean ground turkey I can whole tomatoes with juice 4 cups cooked kidney beans. Zz (16-ounc- Prepare spaghetti sauce with ground turkey as indicated. MARVEL CURRY CASSEROLE Zi pound lean ground turkey can tomatoes cup cooked brown rice 2 tablespoons chopped onion Z cup pineapple tidbits, drained Zz cup raisins 1 tablespoon Worcestershire sauce l(8-ounc- e) 1 minced 2 tablespoons flour 1 Zz cups chicken stock Zz cup white wine dash paprika dash salt and pepper, to taste Turkey can be used in a variety of ways. In large saucepan, melt butter and add garlic. Saute till tender, then add flour slowly. Continue stirring till butterflour mixture is smooth. Slowly add chicken stock, stirring constantly till mixture is smooth. Add wine, paprika, salt and pepper. Stir over medium-higheat till mixture begins to thicken. Add meatballs carefully to hot sauce. Reduce heat to simmer. Cover pan, and continue cooking slowly for about 30 minutes or until meatballs are cooked. Serve meatballs with wine sauce poured over them, either on brown rice or alone. Serves 4 to 6. h MARVEL STUFFED MANICOTTI cup ground turkey, uncooked whole-whebread crumbs 1 1 cup at 2 eggs 1 cup Jack cheese, grated 1 tablespoon olive oil Zz teaspoon each garlic powder and marjoram each oregano and 18 teaspoon thyme teaspoon each sweet basil and parsley flakes cups spaghetti sauce (see following recipe) cup water package (about 8) uncooked manicotti noodles Zz 3 1 1 In large bowl, mix turkey, bread crumbs, eggs, cheese, oil and seasonings together thoroughly for stuffing mixture. Set aside. Mix spaghetti sauce and water together and pour !i diluted sauce into the bottom of a shallow baking dish (I use a dish that is about 7 x 11 x The point is to space the noodles out in a single layer about Vz inch apart to allow for 2. swelling during cooking.) Now stuff each uncooked noodle with stuffing mixture. (An iced tea spoon works well for this task.) Lay the stuffed noodles about Vz apart (no less) on the sauce in the pan. When all noodles are stuffed and in the pan, pour the remaining diluted sauce over them. Cover pan tightly. Bake at 375F for about hour or until pasta is tender. Makes about 4 servings of two stuffed noodles per serving. 1 These noodles are large, tubular pasta, about 3 inches long. One of my cookbooks identifies them as manicotti and another as rigatoni. However, a noodle of this shape by any other name would taste just as delicious! dash salt and pepper, to taste Saute onion and garlic in olive oil till tender. Add crumbled raw turkey and cook, stirring well, for about five minutes. Add tomatoes with juice, tomato sauce and seasonings. Simmer for about 25 minutes. Serve over cooked spaghetti noodles. Serves 4 to 6. While sauce cooks, prepare noodles according to package directions. Drain noodles and lay a layer of noodles across the bottom of a greased shallow baking dish. Next, mix cottage cheese and Jack cheese together. Spoon cheese mixture in an even layer over the noodles Lay hard-boileegg slices on top of cheese mixture. Pour sauce over everything and bake at 350F for about 20 minutes. Serves 6 to 8. d drained dash salt end pepper, to taste chili powder, to taste (start with 2 teaspoons) Melt butter in large saucepan and saute onion and garlic until tender. Add turkey and saute until meat is cooked. Add tomatoes, beans and seasonings. Continue cooking for about an hour over low heat. Serves about 4. I teaspoon curry powder, or more to taste Brown the meat in small saucepan. Blend meat with other ingredients and spoon into a oven casserole. Bake at 350F for 30 minutes. Serve with any or all of the following condiments: grated coconut, sliced bananas, chutnvy, chopped peanuts. I |
