Sprinkle with remaining cheese and bake in moderate oven for 45 minutes or until golden brown. Serves 6 to 8. It comes naturally, for Ellie is a native of Athens. During World War II her family went to Greece and after the war Ellie came to the United States to visit her sister and go to school. Her parents later came to the United States, but her mother returned to Greece after her fathers death. Ellie tries to visit her homeland and family every other year, with her daughter Melina going three times and her husband joining them there once. It was in 1961 that Ellie and George Mavridis came to Brigham City, and he is employed at Thiokol. Ellie started working as a volunteer at the hospital and now alternates her volunteer time with serving as a nurses aide. She is taking training and likes nursing so well that she is contemplating going to Weber State college for additional training. She also imports jewelry and art objects from Greece to sell to area businesses and delights in sharing those and her own family antiques with school children, church groups, and community organizations. As a cook, Ellie likes to please her husband and Melina with some of her Greek specialties. Buttery-ric- h pastries filled with fruit or honey are traditional, and she notes that the foods of Greece are spicy but not hot. Oregano is probably the most common spice used, and she gathered some in Greece last summer since it is there.
