I wait until the shelves in the pantry are bare and my husband is telling me we should turn off the fridge to save energy and simply fill a cooler up with ice to keep the milk cold, because milk is all there is in the fridge. I was wandering through the grocery store this past week with a stomach that was rumbling, a mouth that was dry and a head that was full of too many thoughts to remember remem-ber why I was really at the store. My shopping list seemed too long and my legs seemed too weak to get me through each isle. But I knew I had to carry on. I had six hungry mouths at home waiting for me, and if I did not show up with several bags of groceries I would be in trouble. Now, for me to shop is a major ma-jor chore. I like to have one of every ingredient on hand, just in case. There are days that I will decide to try a new recipe, and if I do not have the proper ingredients on hand I get frustrated. It is hard for me to load the kids in the car, to buy just one ingredient. So, I try to safeguard myself and have most everything on hand. This means while I am shopping shop-ping I have to keep my mind open, and think of everything that I could possibly use in the weeks to come. But, usually I am just living in the moment and hoping that I happen to come at the right time, when samples are being served to calm my aching belly. As I was walking through the store I was noticing the price of food, and how expensive expen-sive things are becoming. I had just filled up our car with gas, and the pump shut off at $99.99. The gas tank was not completely full, but the gas pump would not allow it to go past the hundred-dollar mark. I was feeling like I had just been hit in the stomach, as I was now at the store and would probably have to budget bud-get another $200 for food. I was praying at this point that my husband was at home watering wa-tering our money tree that we UTAH VALLEY UNIVfMSITV f V . Mm, .1 Pumpkin chocolate chip cookies, any cookie lover. are growing out back. Things as simple as, cookies in the grocery store bakery are becoming too expensive for anyone to afford. There is a pumpkin chocolate chip cookie that you can find in many store bakeries that people love. Our son would eat these pumpkin cookies for every ev-ery meal if we allowed it. I went to pick up a box of these pumpkin cookies and remembered a recipe that I had at home for simple, inexpensive, and delicious chocolate chip pumpkin cookies. cook-ies. I passed up.the $5 cookies and added them to my list of "things to cook this week." I believe we are all feeling like we need to pick up an extra job, just to put food on the table and gas in our cars. I know with a little bit of planning plan-ning and more recipes in our cookbooks we could save a dollar here and there on food. Cooking does not have to be elaborate, hard, time consuming, consum-ing, or expensive. I enjoy cooking simple. I do not have a lot of time at the end of the day to cook for hours on end, and after filling our two large vehicles with gas our budget can be very tight. So this week I would like to share a couple of simple and inexpensive recipes for cookies cook-ies just like you would find in the bakery, but even better! Chocolate Fudge Cookies 1 1 package devil's food cake mix 2 eggs 12 cup vegetable oil 1 12-1 cup semi-sweet chocolate choc-olate chips I generally use milk chocolate choco-late chips in all recipes. But this recipe is too sweet with milk chocolate, so I suggest sticking with semi-sweet ... unless you have a real sweet tooth! Preheat oven to 350 degrees. Grease cookie sheets (I always al-ways use parchment paper.). In a medium bowl, stir together to-gether the cake mix, eggs and oil until well blended. Fold in the chocolate chips. Roll the dough into walnut sized balls or use a cookie .r V.'. ' , . Emily Marlowe canned pumpkins, will tempt scoop. Place the cookies 2 inches apart on the cookie sheet. Bake for 8 to 10 minutes. Allow Al-low cookies to cool on baking sheet for 5 minutes before removing re-moving to a wire rack to cool completely. Pumpkin Chocolate Chip Cookies 1 1 14-ounce can pumpkin 1 1 package spice cake mix (Betty Crocker is the best.) 1 12 bag milk chocolate chips Preheat oven to 350 degrees. Grease cookie sheets or line with parchment paper. In a medium bowl mix together to-gether well pumpkin and cake mix. Fold in chocolate chips. Place on cookie sheet by cookie scoop. Batter will be very sticky. The way you place the batter on the cookie sheet will be the way the cookie cook-ie will stay. These cookies will not flatten out as they bake. So be sure that the shape, size, and thickness are what you are looking to end up with! Bake for 20-22 minutes. Cool on wire rack completely. com-pletely. Do not make the cake mixes as directed on the box. Just use the mix. mm mim |
