Show The Summit County Bee - Homemaker Hints Dr. Vaughn Mendenhal, UJS.U. FoodScience specialist, advised homemakers on proper home canning methods Tuesday, July 9, at the Coalville Stake Center. His primary concern, is not that of good taste and nutrition, but the destruction of Clostridium Botulinum, a poisonous bacteria more commonly referred to as bot- ulism. Noting that home canning done with 'luck rather than knowledge is potentially dangerous, Dr. Mendenhal pro- ceeded to outline the steps necessary to safely preserve meats, fruits and vegetables. First, assembly the proper equipment, a pressure canner for meats and vegetables, a cold pack canner for fruits, and canning jars specifically designed for canning. It is a good idea to write to one of the larger canning companies such as Ball or Kerr, for their book on canning to obtain the most accurate time schedules foi different foods. The addresses of these companies are available at the Extension Office in the Coalville Courthouse, and the cost of such a bulletin is minimal. With the equipment at hand and the recipe ready, its time to prepare the food for canning. Dr. Mendenhal stressed that the time from washing and preparing the food to the end of processing it should be as short as possible. He suggests that you do one cookerful at a time, from start to finish, rather than process large amounts one step at a time in assembly line fashion. This keeps the bacteria - down, preserving greater freshness and vit- growth amin content as well. All meats and vegetables except tomatoes, must be processed in a pressure canner. Meats must be fully cooked, then cut in uniform pieces. Vegetables should lie washed thoroughly in cold water, trimmed, andthencut in uniform pieces. Uniformity is important in order for the heat to penetrate evenly, so follow the recipe's directions for length and thickness because it corresponds to the recommended cooking time for that part- icular food. Put the meats or vege- tables in sterilized jars, add water, apply lids, and process. Dr. Mendenhal stressed that in order to prevent botulism in meats and vegetables, the food must be brought to 2 DO degrees and held there, for the specified time. At sea level this requires 10 lbs. of pressure, but here in Summit County, the pressure must reach at least 13 ' lbs. due to the difference in altitude. For this its important to have your canner gauge checked yearly. If for some reason the pressure in your canner drops for even a second or two, you must begin the timingprocess again. What makes them do it, what makes them want to ride one more time when the chance of severe injury or even death with so little profit rest on a ride? Rodeos have been condemned as being inhumane, but in reality far more cowboys are injured each year than is stock. Consider also that rodeo stock works for little more than 10 seconds a week and spends the remainder of the time in pasture.
