When the food arrives in the stomach, secretion of digestion juices has already begun in response to the stimulus of smelling, thinking about, tasting and chewing the food. The stomach is lined with cells called the mucous membrane. Within this lining of the stomach are numerous microscopic, tube-lik- e glands called gastric or stomach glands. It is simply, estimated that there are over 35 million of them. These glands secrete most of the gastric juice needed for digestion, about two to three quarts in twenty-fou- r hours. The gastric juice secreted by the stomach glands contains several substances. One of them is hydrochloric acid. This is essential for providing the necessary acid conditions in the stomach. The gastric juice also contains enzymes, one of which is called pepsin. It is the most active substance in the digestive process of the stomach because it breaks down dietary protein into products the body can absorb. This enzyme cannot function properly without the presence of hydrochloric acid. Absence of hydrochloric acid and a mystery substance called the intrinsic factor causes a condition known as pernicious anemia. This factor is vital if Vitamin 2 of the food is to be used by the body. If Vitamin 2 cannot be absorbed, the red bone marrow is not stimulated to produce enough normal red " 1 W Y. Other glands in the digestive system also play important roles in digesting food so it can be used by the body. The small bowel or small intestine completes the digestion of food and absorbs the products of digestion. The lining of the small intestine has a great number of very tiny, finger-likprotrusions, or villi, as they are called, measuring about l25th of an inch high. This is where some of the food is absorbed.
