Excessive ageing is injurious to the eating quality and should be avoided. The approved periods for beef is from five to ten days and when properly set up should be cut regardless of time as it will never get any better for locker use. The shorter periods for beef being suitable for carcasses not well protected by fat. Veal and Iamb when the meat is chilled and properly set up should be cut and put in the locker. Pork should hang only as long as It takes to chill thoroughly to the home. This time depends on the size of the hog and the temperature of the chili and age rooms. No carcass should be chilled too fast.
