Show DAIRY BUTTER MAKING RULES Pure salt of medium fineness and with a bodyvelvcty to the touch4should be used The whole of the cream should bo well ell stirred every time fresh cream is added and half a dozen times a day besides During summer tho best churning tern pcraturo is 57 to 5 degs during late fall and winter 62 to 6 degs are preferable Tho butter should be kept cool during the working and also during the few hours whilcit may be left forthe salt to dissolve When shallow open pans are used for setting the surroundingair should be pure l damp musty cellar is no fit place for milk As soon a the salt is dissolved the butter may be worked the second time to correct any streakiness which the first mixing of salt may have caused Threequarters of an ounce of salt to the pound will be the right quantity for most markets for immediate consumption and one ounce to the pound for packed butter The agitation of churning should kept I up till the butter comes into particles larger than clover seed The buttermilk should then be drawn oil and pure water at 55 degs added in its place Two days before the churning is to be cone about one quart of cream for every four pailftils to bo churned or a quantity equal to 2 per cent should be set apart and kept as warm as 70 dogs Fahrenheit The cream for each churning should al be gathered into ono vessel and kept cool and sweet A good practice for fall and winter is to mix 2 per cent of pure water with the cream before it has become sour One day before the churning that small quantity cream called a fermentation starter which will then bo sour should be added to the quantity which is intended for churning and be mixed therewith By churning this fU u minute or two the butter will bo washed free from milk while it is still in a granular state The milky water may then bo drawn oil and replaced by a weak at the same temperature After a minutes churning the butter maybe may-be left to drain in the churn for hal an hour before it is removed to be pressed and salted Professor James W Robertson in Toronto Globe |
