This weeks featured recipe comes from Mrs. Arnold Ortiz, St., Ogden. Rita is a dispatcher for the Roy Police Department and is expecting her second child New Years Eve. She also has a son, Arnold. TOSTADOSATHOME lb. ground beef pkg. flat corn tortillas can refried beans v2 block cheese, grated a head of lettuce, chopped of grated a tomato chopped 1 onion, chopped Fry ground beef, drain and add the can of refried beans. Let simmer for 2 or 3 minutes until heated through. Remove from heat. Fry flat corn tortillas until they are crisp. Set aside. After they are all done, spread the hamburger-bea- n mixture on tortilla, sprinkle with cheese, onion, lettuce and top with tomato. Pass your favorite hot sauce, if desired. Eff Stuffed Zucchini 4 med. zucchini (about l!2 lbs.) 2c. water 1 large tomato, chopped 2 tbl. butter or margarine 3 beaten eggs 4 tsp. salt dash pepper V2 c. shredded sharp American cheese (2 oz.) Halve zucchini lengthwise. Scoop out pulp leaving y4 inch shell. Chop pulp to make 1 cup, set aside. Place zucchini shells, cut side down in large skillet. Add the water. Simmer, covered, until tender (5-- 6 min.) Drain. Turn cut side up in same skillet, sprinkle with a little salt. Meanwhile in medium skillet cook zucchini pulp and tomato in butter until squash is tender (3 min.) Add eggs, Vi tsp. salt and pepper. Cook over low heat until just set, lifting with spatula so uncooked portion runs underneath; Spoon egg mixture into zucchini shells. Top with cheese. Cover. Heat until cheese melts. Serves 4. Smith family of Riverdale will be receiving a visit from Sally of Wilderson Omaha, Nebraska this week as she visits Utah for the first time.
