July 15. 1992 How did our local towns Weekly Crop Report H Prices received by Utah farmers and ranchers in mid June were up from the previous month for milk and alfalfa hay, but down for cows, steers and heifers, calves, lambs, sheep and barley, according to the Utah Agricultural Statistics Service. Cow prices averaged S46.80 per hundredweight (cwt) during mid-Jundown 70 cents from May and down S5.90 from June of last year. The steer and heifer price at S73. 10 per cwt was down 80 cents from last month and down 10 cents from June of 1991. Calves at $87.70 per cwt were down 40 cents from a month ago and down $17.30 from the previous year. Lambs at $49 per cwt were down $1.80 from last month, but $3.50 higher than the June 1991 level. The sheep price was $20 per cwt, down 20 cents from May but up $2.70 from last year. The all milk price was $12 per cwt, 10 cents higher than the previous month and $1.40 above June of 1991. Barley at $2.46 per bushel was down 3 cents from the May price and down 4 cents from the year before. Baled alfalfa hay was $61 per ton, up $3 from the previous month, but down $7 from one year ago. Other hay at $43 per ton, was unchanged from May by $ 1 3 below the June of 1991 level. Iv ..... .41. These mixes are less effective in controlling discoloration. If you do use them, follow manufacturers directions. Raw Packing Versus Hot Packing Many fresh foods contain from 10 to 30 percent air. How long canned food retains high quality depends on how much air is removed from food before jars are sealed. Raw packing is the practice of filing jars tightly with freshly prepared, but unheated food. Such foods, especially fruit, will float in the jars. The entrapped air around the food may cause discoloration within two to three months of storage. Raw packing is more suitable for vegetables processed in a pressure can- ner. Hot packing is the practice of heating freshly prepared food to boiling, simmering it two to five minutes and promptly filling jars loosely with the boiled food. Whetlier food has been hot packed or raw packed, the juice, syrup or water to be added to the foods should also be heated to boiling before adding it to the jars. This helps remove air from food tissues, shrinks food, helps keep the food from floating in the jars, increases vacuum in sealed jars and improves shelf life. Hot packing is the best way to remove air and is the preferred pack style for foods processed in a boiling water canner. Controlling headspace The unfilled space above the food in a jar and below its lid is termed Directions for caning headspace. inch for fruits specify leaving one-haand tomatoes to be processed in boiling water.
