Show vacation meals made with honey now that the good old summer time is in full swing the highways will once again be filled with vacationers tio ners if you are planning to join the general migration and head for your cottage at the lake or in the mountains now is the time to start thinking about the food you will take along dishes that require a minimum of preparation time are the thing to choose so why not make a large dish of honey baked beans before you leave to have all ready for the table to help alleviate current shortages make your own boiled salad dressing to take along for the ever popular summer salads HONEY BAKED BEANS soak 2 cups washed beans in 4 cups of cold water over night in the morning drain oft off any water that has not been absorbed cover the beans with fresh cold water and cook over low heat in a tightly covered saucepan do not allow the beans to boil let them simmer for ivi hours again drain the beans saving the water prepare the bean pot by placing about pound of scored salt pork in the bottom add the beans cover with the following mixture use the bean water that has been drained from the beans and add to it cup honey if no bean water wa left over use plain boiling water mix I 1 teaspoon salt 1 teaspoon dry mustard I 1 teaspoon ginger if de sired and 1 tablespoon of finely chopped onion with a little of the honey water add remainder of the honey bean water to this season ing and pour over the beans place small pieces of salt pork on top bacon may be used cover bean pot and bake in a slow oven about 6 hours uncover the bean pot during the last hour of baking if the beans bean become too dry it may be necessary to add a littfe little water waier BOILED DRESSING 1 teaspoon mustard I 1 teaspoon salt teaspoon cayenne 2 tablespoons flour I 1 cup milk 3 tablespoons honey 2 egg yolks 1 cup vinegar 1 tablespoon butter mix dry ingredients in top of double boiler add milk honey and egg yolks stir well cook over hot water until thickened add vinegar and butter mix well until smooth mixture is formed |
