Show Page A8 Thursday, February 25, 1988 Park Record -f f' River Horse Cafe adds a bit of sophistication to Main St. ...I . . . - ill I i Iff" 1 : 1 I By RON GEORG Record staff writer With the comfort of a European Bistro and the menu of a sophisticated big city restaurant, the River Horse Cafe, now open on Main Street, is a pleasant addition to the Park City restaurant list. Under the auspices of chef Maurice Sainte Yves, who has built a good sized following in Utah at places like Nino's, Confetti, and Cafe Delux, aside from working as a consultant con-sultant to numerous others, the River Horse offers fresh food prepared with refreshing subtlety. Sainte Yves, who brought along Paul Marner and Michael Lierman, two dedicated cooks, classifies his signature as simplistic and colorful. "I've designed the menu," says Sainte Yves. "You don't see bookshelves of cookbooks here, the concept is not that type. We do everything ourselves." What they do is as beautifully presented and bound to please the most sophisticated palate. Sainte Yves classification of simple is only conditionally true. While the items on the menu are prepared with a minimum of ingredients, ingre-dients, the subtle blending of those few ingredients creates exciting flavors. Sainte Yves and his two helpers are always at the cafe. They have a hand in everything which comes out of or goes into the kitchen. "Many of the purveyors I deal with will vouch for the fact that I'm a stickler," says Sainte Yves. "I'll turn things back that aren't acceptable, accep-table, and I'll send as far away as Europe to find the right ingredient." The right ingredients include fresh seafood, exotic oils and vinegars, fresh broths, cheeses aged at least two years, and fresh pasta. The pasta is the only thing they don't make in the kitchen. Pasta rolling requires more space than the River Horse has, so they have it brought in daily. The restaurant does not have a freezer or much storage space, so deliveries I i i . rr wX"" K ft. -'" . . Sainte Yves has cooked in Europe, San Francisco, and Louisiana in his 20-plus years as a chef, but most of his fans here know him from his Salt Lake ventures. "Most of our customers are local," said Sainte Yves. "We are doing well here for two reasons. One is that there are many out of town visitors to Park City, Ci-ty, and they have been exposed to my type of food. The other is that many of my followers in Utah are from Park City." Seasons Eating Limited, the organization which owns the River Horse, has chosen a perfect location for their Park City operation. Upstairs in the Old Masonic Hall, at 540 Main Street, the simple, spacious room compliments the restaurant's concept. With the original wainscoating, pine floors, and aluminum ceiling, the room has a traditional feel. By adding a bit of modern architecture over the service area, the designers of the room have created something similar to Sainte Yves food it is simple and traditional, with a modern flair. The room is painted white and cream, the tableclothes match, and the chairs and tables are varnished wood. Set against that, the waitpeo-ple waitpeo-ple are dressed in black. All of this description, however, is serving only to muddy the River Horses's image. The concept is clean and friendly, and the food is perfect. That is all you need to know. Test your house for gas Park City area residents who would like to test their homes for indoor concentrations of radon gas may avail themselves of a new, inexpensive, do-it-yourself testing service through the American Lung Associaiton of Utah. Franklin K. Brough, director of the association, says it is offering a one to three-month Track Etch radon detector to Park City residents at a discount dis-count price of $22. The price includes the analysis of the test and the reporting of results to the resident. All reports are strictly confidential and made directly from the laboratory to the resident. -1 EPA says radon may be the second leading cause of lung cancer after cigarette smoking. Radon is a naturally occurring, radiation-emitting gas that cannot be seen or smelled. It is continuously given off by some soils, building materials and even water supplies. The gas can build up in homes, particularly par-ticularly if they are not well-ventilated. A ten-state survey which did not include Utah showed elevated radon levels are becoming a common problem, and occur in one of every five homes on average. The test kit contains all the instructions and accessories to hang the detector in the home. A return container is also provided.
