A A , La L2M Barbecued Franks A special recipe for barbecued franks calls for a tangy sauce. For 6 servings, brown Vs e. chopped onion In 2 tbsp. salad oil. Add Vs c. lemon juice, tbsp. vinegar, V2 c. ketchup, tsp. each musc. honey, tard and celery salt, WorcesterVz c. water and tbsp. shire sauce; simmer 30 minutes. Arrange 2 pounds frankfurters on long metal skewers. Place 6 inches above glowing coals of barbecue pit and broil for 45 minutes, brushing with barbecue sauce and turning every 15 min. Veal Chops with Savory Butter is a somewhat different barbecue recipe when a change from franks and hamburgers is in order. Veal Shoulder Chops To serve 6, have 6 veal shoulder chops cut one Inch thick. Thoroughly blend 4 tsp. dry mustard, tbsp. finely chopped onion, tbsp. finely chopped parsley and Vz c. soft butter; shape Into a roll and chill until hard. Combine Vz c. chill sauce, Vs c. lemon juice and tsp. salt. Arrange chops for barbecuing 12 to 14 inches above glowing coals. Broil for 45 minutes, brushing with chili sauce mixture every 15 minutes. Turn chops once 20 minutes before they are done. Slice butter roll into 6 pieces. Place one slice on top of each hot chop and serve immediately. STRAIGHT BOURBON WHISKEY OI XtTUU.'O CO" 5. cup Crisco cups sifted flour teaspoon salt 5 12 tablespoons water cup grated cheese Mix flour, salt and cheese in a bowl. Cut Crisco into flour with knives, fork or pastry blender until the pieces are the size of small peas. Blend 13 cup of the Crisco-flou- r mixture with the water. Add this to the remaining Crisco-flou- r mixture. Mix and shape into ball. Divide the dough into two parts. Place one portion on a pastry canvas or a board which has been dusted with flour. Roll with short, light strokes from the center to the edges to keep the dough circular in shape. Place crust in a pie plate, trim the edges with a knife or scissors, even with the edges of the pie plate. Add apple filling. Roll the other half of the dough. Cut or prick small steam vents. Place on the filled pie, and trim the edges 12" beyond edge of plate. Fold edge under and flute with fingers. Bake in a hot oven (425F.) about 40 minutes, or until brown. Apple Filling: 5 cups pared, sliced apples 12 cup grated cheese 1 34 cup sugar tablespoon margarine or butter Mix apples with sugar and cheese. Place in pastry-line- d pie plate. Dot with butter or margarine before adding top crust |
