Show Nutrition Notes by Anna Nichka Dear Reader, What do you know about BLACKSTRAP MOLASSES? Thanks to you, have learned quite a lot. However, did have a "close encounter" with it five years ago. All seven members of our family would line up every morning and night for several months for a tablespoon of blackstrap molasses with drops of oil of wintergreen. This therapeutic ritual was suggested to us personally by a prominent nutritionist, Hanna Kroeger, to relieve us of a parasite affliction. Believe it or not, no one complained because father was the first to partake, and with every tablespoon declared the potion it worked all around! Now that I know all I I "ah-so-good- !" about this wonderful food, I am using it every morning in my lemon drink. Incidentally, Hanna also suggested doing her kind of internal housecleaning every spring. for the blackstrap Now, molasses story. Several extractions of molasses are performed. The sugar cane is repeatedly run between rollers, and the juice is boiled. Several boilings produce "pure" refined sugar, and varying grades of molasses are extracted during the process. When the sugar crystals are finally spun out, the strongest-flavore- d molasses, the blackstrap variety, remains. It contains about half the sugar that was in the first cane juice, and is higher in nutrients than the first extraction (light) and second extraction (medium). Sugar cane is a deep rooted grass and is able to draw nutrients from the deep layers of This is why blackstrap sub-soi- l. molasses is rich in trace elements, vitamins and minerals. Blackstrap molasses contains more potassium than any other food, and plenty of iron and calcium. It is an excellent source of B vitamins. It is rich in E vitamin, pantothenic inositol, choline, copper nesium, chormium, and acid, magphos- One tablespoon of blackstrap molasses contains 3 milligrams of iron and over 100 milligrams of calcium. Recommended daily dosage is one tablespoon dissolved in lukewarm water or milk - one half of that amount for children. Blackstrap is said to be beneficial in the treatment of constipation, damaged hair, dermatitis, etc. Because of its strong flavor, adding equal amount of honey in your recipes is advisable.
