Show Beware of Uncooked Pork The following is from the Weekly News Letter, published at Washington, D. C. by authority author-ity of the Secretary of Agriculture: Agricul-ture: "While American people as a i rule prefer cooked pork which is wholesome there are many who unknowingly or deliberately deliberate-ly consume pork in an uncooked uncook-ed condition, either in the form j of raw ham or smoked sausages. ! In many districts, particularly in sections with large foreign populations, a great deal of pirk is made privately or commercially com-mercially into such products for home use or for sale. Great risk always attends the use of raw or under cooked pork. The illness which may result from eating raw pork, known as trichinosis is caused by a parasite or a worm, micro-sopic micro-sopic in size, which occurs in the flesh of hogs. There is no known effective method of treating treat-ing the disease. The patient ! dies or recovers apparently irre- I spective of the nature of the treatment. Many who do not die have their health impaired. Statistics based on microscopic micro-scopic inspection of over 8,000, i 000 hogs during a period of nine years in this country have shown that 1.41 per cent of the hogs were infested with 'ive trichinae. This fact alone makes it important that everyone every-one who eats pork should for the protection of health eat it only when thoroughly cooked." |
