Show HORSE MEAT LEGAL IN NEW YORK The Board of Health of Greater New York has made the sale of horse meat legal after January 1st on the same footing with beef, mutton, lamb, nork and poultry. There is more than a suspicion that New York has been eating horse meat for some time in the form of sausage. At various times sausage makers of nearby districts have been prosecuted on this score. With the ban removed remov-ed they may use as much as they like, hose who know or pretend to know say horse meat is as wholesome as beef and a better and safer food than pork. Des pite thefact that it has been sold openly in Paris for many years, it never has gained favor. Most men look upon horse meat with repugnance. Just why the ordinary ordi-nary human looks upon horse meat with disfavor is indefinable but he does and that is sufficient. The use of horse meat will be limited by the Board of Health to certified butchers and if any pronounced pro-nounced demand develops certain slaughter houses will specialize in it as is done now with cattle and sheep. One argument in favor of the introduction of horse meat is that the horse never has tuberculosis tuberculos-is and is subject to few or none of the malignant diseases to which cattle and hogs and sheep are prey. |
