But in recent years, in the interest of delicious fresh corn for city dwellers, the picture has changed a little. Canneries have come nearer to the cornfield than most of us realize. The ears of corn are picked at the very instant in-stant of their prime ripeness and rushed to the adjacent canneries where the corn is sealed in cans and cooked at once without an iota of flavor lost. f Golden Corn In a can of corn, you have the beginning of many peaceful, sunny dishes. Try these new corn recipes re-cipes which have been tested by a graduate dietitian: Corn and Bacon Omelet: Fry six slices of bacon until crisp, remove from pan and break into small, pieces. Drain contents of one No. 2 can of whole grain coin, add to hot bacon fat, and fry a golden brown. Add the crisp bacon, and season to taste. Meanwhile make an omelet for six. Just before folding over, pour over the corn and bacon, fold over into a hot platter, and serve at once. This serves six. E scalloped Corn and Celery: Bring one cup diced celery and half a cup diced green pepper to boiling in salted water. Drain. Put alternate layers of celery, peppers, and the contents of one . No. 2 can of corn seasoned with salt and pepper in a baking dish. Pour one-half cup of milk over, and cover with one-half cup bread . crumbs. Bake forty-five minutes, or until celery is tender in moderate mod-erate 375 degree oven. This serves six. ( Corn and Cheese Pudding : Com- bine contents of one No. 2 can corn, half a cup chopped green pepper, two tablespoons each of -chopped pimiento and chopped' onion, one cup grated cheese and one teaspoon salt. Add two beaten beat-en eggs, and pour into buttered . baking dish. Bake in a slow oven ' 325 degrees for thirty minutes.
