Show SELL ONLY THE FRESH EGG3 Some Farmers Deliberately Impose on Small Merchants by Giving Goods Known to Be Stale. (Dy A. O. rillt.I.irfl. Konant.) Boiling epss Is one of tho handiest ways for the farmer to gi t a cuea or truilo return for his produce, during ill parts of the year, and if be can Increase tho efficiency of the machinery machin-ery which produces and handles these eggs he is putting Into hla pocket good bard cash. Almost every housewife who Is compelled to buy eggs constantly clamors for some method which she msy pursue In o.der to always get fresh eggs. There Is no housewife who has not somo time or other had the great dinplcuHure of handling spoiled spoil-ed or rotten eggs. This almost constant con-stant occurrence, with the possible exception of tho winter months, practically prac-tically compels those who lecture and carry on experiment station work to plead with the farmers who produce the gs to put onto tho market better bet-ter produce. The egg los each year la enormous and Is beyond all reasonable Jiistlnci' tion, and the blame lies, at least In part, with the farmer for the following two reasons: First, some few farmers deliberately deliberate-ly take to market eggs which they know are not fre&h, because they know Eggs Should Be Packed In Neat Cases. that the merchant Is compelled to take them or lose their trade. Second, and by far the greatest reason, Is because of ignorance on the part of the farmer farm-er as to what and how to sell eggs. When the hens on tho farm are producing enough eggs to warrant the farmer P taking them to tow n, arrangements ar-rangements should be made to bundle all of them properly. A convenient end clean place should be provided wherein the bens can lay. The nat-urnjtendency nat-urnjtendency of a hen is to go off "'V ceds and mako her nest. This ot be tolerated and any eggs hiic1i places should be marked mi'.i in i't at home. When the clean, fresh eggs are batbered thny should be put in a .clean. frt co' place until marketed. Bven though the place is clean and cool. If It is not dry, molds, etc w 111 , commence development and the eggs will soon spoil. If the eggs become damp and they happen to be In contact con-tact with any colored material they will Immediately become atalned. Good egg cases In a cool, dry, clean place, kept up off of the floor, make sn excellent receptacle In tfhlch tc keep eggs previous to marketing. Before these epps are set aside for market, they should be gono over by the farmer as be collects them, and all small, stained, dirty, doubtful, Incubator In-cubator and rotten eggs should hi removed. Small and dirty eggs. If used Immediately, are just as good as large clear onea, but they will not sell will on the market, and If sent in with good eggs will spoil the trade. Therefore, they should be kept and used at home. No eegs should be washed, for the packers claim they will not keep well. All rxs from stolen nests, whoso freshness is doubtful, doubt-ful, and all incubator ergs should either be thrown away, boiled for the little chicks or used at home. They fhould never be s nt to market. Hot-ten Hot-ten eggs need not be discussed. Any person who will sTd one to market deserves all the penalty posslblo from the pure-food law. When eggs have been properly gathered, handled and kept previous to taking to market, the question sf the number of trips to town should be considered. In hot weather the eggs should bo marketed two or thre tlmea per week, and oftener If pos-ilLle. pos-ilLle. If that number of trips cannot be made, co-operate with a neighbor and have him alternate days In the trips which muHt be made. In the fall and spring epga slio'ild be marketed at least once a we-k. Many buyers bsve bad trouble In November No-vember with iitrts elanncd as "h-id gas." These are common, beesiu?8 most farmers believe that after fro?t rs will not rot so quickly, but never-Iheless never-Iheless they do evaporate and the air :e!is In them chow tlo randier that they are atale. Therefore, the more often rgs are marketed, thi grtater are the chances lhat they will be good. |
