Soak 1 lb. small white beans over night; drain; put on fresh cold water; simmer 4 hours; scald A cup molasses mo-lasses (or i cup sugar, browned) 1 tablespoon mustard: 2 tablespoons table-spoons salt, with enough water to come to the top of beans; put the beans in a vessel that can be covered, put in about 2 oz. salt pork and 1 onion; pour over the liquid; cover the vessel (a large pail if no stone jarcau beobtain-ed) beobtain-ed) and bake 4 hours in a slow oven. Be sure the water does not evaporate too much. Uncover Uncov-er and brown the last half hour. |
