Show SAUCE IS NAUTICAL -NICELY SPICED Proper name for this herb-sparked sauce is "Marinara," suggesting the sea and sailors and all things nautical. But you don't have to be a sailor to love it especially with shrimp. It's an easy sauce to make from scratch and worth it. SHRIMP MARINARA 1 can (4'j ounces) shrimp 1 cup chopped onion 13 cup olive oil 1 cup chopped celery 2 garlic cloves, chopped 2 cans (16 ounces each) tomatoes 2 teaspoons sugar 1 teaspoon sweet basil 1 teaspoon oregano 1 bay leaf 1 can (2 ounces) anchovy fillets, chopped Grated Romano or Parmesan cheese Drain shrimp, reserving liquid. Add water to liquid to make 1 cup. In a saucepan saute onion in oil 5 minutes; add celery and garlic and saute another 5 minutes. Add tomatoes (solid pieces chopped ), seasonings, shrimp water. Simmer uncovered 35 minutes or until sauce is thick. Add shrimp and anchovies; heat. Serve over spaghetti generously sprinkled with cheese. Makes 4 servings. |
