Show Gunnison Factory Sets High Price Now that the summer has come and the weather is getting warmer more thought must be given to-the care of milk. In an interview with Mr. Smi h, of the Hyland cheese "acrtory ,thc! News man was advised that ' during the past month the factory at this city has paid a higher price for butter-fat content than any factory in this section of Utah, this price paid f.as been about 7 cents above that paid by the creameries. Mr. Smith says "It will be necessary neces-sary for the milk producers to takv better care of their milk during t) e hot weather, in order for us to pty the highest prices for the milk and if the producers will do this then the factory will be one of the best industries in-dustries in the state. To care for milk properly is not much trouble, Mr. Smith continues; about the only thing that can be done it to keep the milk cool. This can ibe accomplished on most any farm with a little effort on the part of the producers. In order to keep the gas out of the cheese and keep up the standard of the product of the factory, fac-tory, the milk must reach the factory in good condition, and this can be accomplished in the following manner. man-ner. As soon as the milking has been done, the milk should be placed in a stream of water if there be one near, if not a stream then place the can ina tub of water taken from the well. Stir the milk three or four times during the evening. Do not mix the morning and evening milk together until both are cool and then they can be mixed if desired. In this manner the milk wijll remain sweet during the hottest weather and will reach the factory in first class condition." The manager of the Hyland factory fac-tory is anxious to have the producers ake the best care of the milk so that he may pay them the highest price for it and thereby keep them as his customers and keep them satisfied. If the milk becomes sour from exposure ex-posure to the heat, it is useless to the factory and thus a loss is incurred incur-red by the producer. The cheese factory which is a valuable val-uable asset to the community should have the loyal support of every farmer farm-er in this section and it is to be hoped that those who are selling milk to the factory will put forth every effort to care for the milk and keep the factory fac-tory product up to the high standard that it has attained in the short time ' J hat it has been operating.
