Show The saying that Spne man's food Is another man's poison" Is but another way of expressing the Impossibility of fixing a rigid dietary for civilized man In his present condition; but it Is possible pos-sible to determine what elements in food and drink are likely to be Injurious Injuri-ous to some individuals or to all. DISHES FROM LEFTOVER CAKE. Cake crumbs may be used with any kind of fruit juice or fresh or canned fruit as ft brown betty. Put a layer lay-er of the cake crumbs in the bottom of a buttered but-tered baking dish ; then add small bits of butter, a grating of nut- meg or a .sprinkling of cinnamon if flavor is needed, some of the fruit, and more crumbs until the dish Is full. Bake until thoroughly heated through. Plum Pudding Cake. Take two cup-fuls cup-fuls of bread crumbs softened In one-quarter one-quarter of a cupful of milk. If the crumbs are very dry add more milk. To the softened crumbs add one well-beaten well-beaten egg, one-fourth of a cupful each of molasses and sugar, one-fourth one-fourth of a cupful of stewed prunes, chopped, three-fourths f a cupful of chopped raisins, two teaspoonfuls of mixed spices, one-fourth of a tea-spoonful tea-spoonful of soda, half of a teaspoon-ful teaspoon-ful of salt, two teaspoonfuls of lemon juice and one-fourth of a cupful of flour. Bake in a moderate oven forty-, five minutes. Serve with : Foamy Sauce. Cream one-fourth of a cupful of butter, add three-fourths three-fourths of a cupful of brown sugar, a few drops of lemon Juice, four table-spoonfuls table-spoonfuls of cream and one-half tea-spoonful tea-spoonful of vanilla. Cream the butter, but-ter, add the sugar slowly and beat very light, then add the other ingredients ingredi-ents and place over boiling water, stirring stir-ring until foamy. Sponge Layer Pudding. Slice sponge or any plain butter cake in even slices ; put together with preserves or jam of any Jtlnd in three or four layers. Pour over a hot fruit sauce and place in the oven to heat and absorb ab-sorb the sauce. Serve with a fruit sauce or sweetened cream. Berry Whip. Fill a dish with slices of sponge cake. Sugar p quart of strawberries, mash lightl;, and pour over the cake. Beat three egg whites until stiff, add three tablespoonfuls of powdered sugar and beat through the berries to color and flavor. Heap on the cake and serve with cream. |
