Ralph "Waldo Emerson. GOOD THINGS FOR THE FAMILY TABLE. When a dish is both good and economical eco-nomical it Is bound to be popular, f Liver Pie. Cut calves' liver into strips using one pound, parboil flvt minutes In boiling wate to cover, drain and rort in flour. Fry two slice of bacon until crisp, remove re-move and cook the liver in the fat until brown. Carefully arrange the liver in a casserole, add two cupfuls of boiling water and stir until well blended. Cut the bacon into small strips and lay over the liver. Tut five medium-sized potatoes and one small onion through the meat chopper and mix with three tablespoonfuls of salt. Spread this over the liver, pouring the water and fat over it. Cover and bake In a hot oven until the liver and potato are well cooked. If desired the potatoes may be cooked, mashed and browned ' on the top of the dish. Bran Gems. Mix together one cupful cup-ful of flour, two cupfuls of bran, two teaspoonfuis of baking powder, then add two tablespoonfuls of shortening, two tablespoonfuls of sugar, or molasses, molas-ses, one teaspoonful of salt, one and one-half cupfuls of milk and a half cupful of chopped raisins. Place in greased gem pans and bake in a moderately hot oven for twenty min. utes. Lemon Apple Pie. Take two cupfuls cup-fuls of chopped apple, one cupful of sugar, the juice and rind of a lemon, one egg well beaten, half a cupful each of water and rolled cracker crumbs. Bake in a two crust pie in a moderate oven. Marshmallow Sauce. This sauce may be used on anv baked pudding like cottage pudding, out is nice with steamed cake. Mix one cupful of dark brown sugar with three tablespoonfuls table-spoonfuls of flour, add one and one-half one-half cupfuls of boiling water, and cook until smooth; add two tablespoonfuls of butter, or less., and twelve marsh-mallows marsh-mallows cut in quarters. Serve hot. |
