A salad is always a welcome dish, and If well prepared and garnished is i ju.v to ine as well as the palate. Tomato and Pineapple Pine-apple Salad. Take one dozen t o m a t o es. two cupl'uls of pineapple pine-apple cut in cubes, one cupful cf Khiilish walnut meats, three tcaspoonfuls of salt. Mrx well niul cover with -the following dressing: Two teaspootii'uls of salt, one saltspoonful of pepper, one-quarter of a cupful of vinegar, or lemon juice, and one cupful of olive oil. Wash, skin and cut in two, length-1 wise, six anchovies. Cut into neat pieces two boiled potatoes; chop fine one pickled beet and one sour cucumber cucum-ber pickle. Put into a salad, bowl one head of lettuce; add the potato and a dash of cayenne, then the anchovies, the chopped pickle and spread over all three tablespoonfuls of boiled dressing. dress-ing. Garnish with a mound of chopped pickled beet placed in the center. Shrimp Salad. When canned shrimps are used, wash thoroughly and dry on a cloth.
