Show Thursday, July 19, 2007 Axtell News by AUDREY BOORE The community extends a welcome to Wade and Vicki Brackett who have moved into their new home on the west side of Axtell. Wade is retired from the Federal government and Vicki is a dental assistant. Their son Tyson and his wife Julie live in Gunnison, and their daughter Tehra and her husband Tyler live in Spanish Fork. The Bracketts plan to build an indoor arena and train horses. It is hard to believe that the summer is going so fast with the 4th of July past and the 24th coming up fast. Axtell will be celebrating the 24th of July with a ward party at Anthony Flat with games at 5 and dinner at 6. Many years ago before motor cars made travel so easy, Axtell held the 24th of July celebration down on the Slew by the river which is now located down on Dick Christensen’s farm, west of Axtell. They had games for the kids, a baseball game for the men, a picnic dinner and in the evening, dancing. This could have been a dish the ladies would have served: Stewed Chicken without Water Take a young chicken too large to fry, cut up as for frying. Salt and drain. In a large kettle add 1/2 cup butter, 1/2 cup shortening or drippings and 3 or 4 slices of onion. Heat in kettle until onions are light brown, take onions out. Put in chicken large pieces first, put on back of range (wood) and cook slow for 2 or 3 hours, according to size of fowl. Stir often. Cook 1 cup rice in salted water til done. Heap rice on platter. Place chicken around rice on platter, make gravy as for stewed chicken and serve over rice and chicken. Delicious, try it. Can omit rice and use potatoes instead. Vanilla Ice Cream 2 1/4 cup sugar 6 Tbsp flour 1/4 tsp salt 5 cups milk, scaled 6 eggs 4 cups heavy cream 4 1/2 tsp vanilla Combine sugar, flour and salt in saucepan. Slowly stir in hot milk. Cook over low heat for about 10 minutes, stirring constantly until mixture is thickened. Mix small amount of hot mixture into beaten eggs. Add to hot mixture and cook 1 minute longer. Chill in refrigerator. Add cream and vanilla. Pour into gallon ice cream freezer and churn til frozen. Remove paddles from ice cream freezer and pack can in ice until ready to serve.
