BAJA CANTINA Park City Mountain Resort, 649BAJA. Trade your ski hat for a sombrero after a day on the slopes. Under the menu heading “El Muncho,” Baja serves up a Deer Valley quesadilla and a Park City quesadilla. Curiously, the Deer Valley dish is the one “for those who like it hot, spicy and rich.” The visiting apres-ski crowd packs this restaurant during high season. Try the carnitas or carne asada La Paz. And, of-course, the margaritas. $ $ . CHIMAYO 368 Main St., 649-6222. Hay, que bueno. Southwestern flavors meet French tech_ niques at Bill White’s stunning restaurant. The menu features surprises like wild mushroom tamales and duck enchilada. There’s also a loin of venison wrapped in a crust of herb pueblo flatbread, and a seared elk burrito.
