The samples were collected by Utah Stat University from all over Utah to determine if Utah tomato varieties had enough acid to inhibit growth of clostridium botulinum microorganisms. . According to Von T. Mendenhall, nutrition and food science professor at USU, the acidity of the 351 samples of home canned tomatores was sufficient to inhibit c. botu-Unuwith the exception of one sample which had excessive mold growth which reduced the acidity significantly. Mndenhall pointed out that botulism, resulting from the growth of the clostridium botulinum, is a potentially fatal poisoning and that five cases of botulism between 1950 and 1974 were attributed to home canned tomato products in the United m Lets get a bit more light on the subject! I'm Reddy Kilowatt, your friend at Utah Power. This column is devoted to questions Hi, and suggestions we receive from our customers. You are warmly invited to participate. Questions and suggestions regarding electricity, your electric service or energy conservation are welcome. g Is It true that it costs less to leave a light on than to keep turning It on and off? a Turning a fluorescent lamp on and off will shorten the life of the tube. Therefore, it is better to leave a fluorescent fixture on for up to an hour than to switch it on and off. If it will not be needed for longer than an hour turn it off. Regular incandescent bulbs, however, should be turned off when not in use. Three-wa- y bulbs in table lamps can conserve energy if they are turned on higher wattages for reading and lower for conversation. Small wattage bulbs should be used in conversation and dining areas. Outdoor security lighting should be put on a timer or photocell unit that turns it off automatically. g Which is operate or jk least expensive to my radio, stereo TV? The Faraday Science Series, sponsored by the U of U physics department, is a program of one-hoevening lectures designed for anyone over 12 years of age. These will not be dull, pedantic g or science lectures, says Dr. Haven Bergeson, department chairman, the programs will be delivered by some of the most exciting lecturers on our faculty and will include lively and sometimes amazing demonstrations of physical principles. We want to turn people, especially young people, on to the idea that physics is fun, exciting and accessible - a part of our everyday world. Invitations to attend the series are being sent out to scout troops, church groups and youth clubs throughout the Salt Lake Valley, but families and other groups of any age are welcome, Dr. Bergeson says. Groups are requested to call 1 and request free tickets for any program they are interested in. If a group of 150 people or more is interested in attending, he says, a special presentation can be arranged. Any unreserved seats will be available to people who come without a ticket. All lectures will be from 8 to 9 p.m. on a Tuesday or Wednesday in Room 101 North Physics. The programs scheduled this fall are: Oct. 20, The Nature of Music: Dr. Orest. Symko will show why two musical instruments sound different when playing the same note and discuss such mysteries as the ghost flute the third flute heard in flute duets. Oct. 26, The Nature of Light: Dr. George Williams will talk about the surprising behavior of light, what distinguishes different colors and how two light beams can interfere with eath other. Oct. 27, Electricity: Dr. John Deford will show that although electricity mystifies many, its behavior is in fact simple. sleep-inducin- States. m 581-690- - solid-stat- UTAH To be sold Defendants. at Sheriffs Sale to-w- it: Utah. LACH FAMILY PARTNER- ur micro-organis- Scientists at the U.S. Department of Agriculture suspect that microorganisms other than botu-Unuwere present in the tomatoes, causing reduction of the acidity so the botulinum could grow and the USU food produce toxin, scientist stated. According to Mendenhall, it is not the lack of acidity but improper canning methods which are responsible for spoilage. Of the samples collected for our research, one of the most obvious reasons for spoilage was improper processing times. At sea level the USDA recommends a processing time of 45 minutes for the water-bat- h due to (cold pack) method altitude changes in Utah, 55 minutes is recommended in this state, noted Dr. Mendenhall. In interviews conducted during the collection of samples, two main reasons were given for reducing to retain more processing time vitamins and to improve flavor. Neither of these reasons is justified in view of the risk involved, stressed the USU professor. He also emphasized only the waterbath and pressure cooker methods were recommended for tomato canning. Open kettle methods are not acceptable because of the risk of recontamination after the cooking process. Of the 38 samples we collected which were processed by the open kettle method, 18 contained microoganisms which would grow on selected media," Mendenhall related.
